As of about 2 months ago, I’m obsessed with asparagus. I’ve always enjoyed it, but I wouldn’t say I loved it by any means… now, if you ask me.. I could easily eat an entire bowl of this Healthy Lemon Parmesan Roasted Asparagus for lunch… and I may have done just that after taking the photos for this recipe.
I’m pretty sure asparagus is one of those things that you either love or you hate, and there is no middle ground.
I’m in the camp of loving it… and my love of it/me making it multiple times/week for a side for dinner has put Tyler in the camp of 100% hating it. Oops! I love it for a few reasons…
One.. it’s so easy to make. You can put pretty much any spice mix and olive oil on asparagus and have a delicious side dish. Two: It cooks SO easily.
Usually you only need an oven on high heat and 10-12 minutes in the oven to get perfectly roasted perfection! Three: It’s seasonal.. which means when it’s in season, it’s super cheap + easy to find. What’s not to love about it?!
I’m biased and think this Healthy Lemon Parmesan Roasted Asparagus is the best way to make it, but honestly I’ve never made it a specific way and disliked it… It’s pretty hard to mess up!
It’s got light lemony flavor from lemon juice/zest, and then a kick of salty from the amazing parmesan cheese (We use Sartori, it’s the best!).

If you’re looking for the easiest way to make asparagus, this Healthy Lemon Parmesan Roasted Asparagus is it! Next time I make it, I’m definitely going to save it and chop/toss it with some pasta with some mushrooms, corn and summer tomatoes. I think it would be SO yummy!

Healthy Lemon Parmesan Roasted Asparagus
- Preheat oven to 400 degrees. Line a baking sheet with parchment paper or silpat baking sheet.
- Line cleaned, trimmed asparagus on baking sheet. Whisk lemon juice, zest, olive oil, salt, pepper together.
- Brush asparagus with lemon mixture + sprinkle parmesan on top of asparagus.
- Bake at 400 for 12 minutes until asparagus is tender.
