A few months ago I shared this Crispy Sheet Pan Roasted Potatoes recipe and you all went CRAZY for it. So many people messaged me raving about them and even posted pictures of the potatoes with their dinners which totally makes my day.
Since they were so popular, I figured I’d share something equally delicious and somewhat similar – these Roasted Sweet Potato Cubes!

Baked Sweet Potato Cubes
These Crispy Garlic Thyme Roasted Sweet Potatoes are basically the fancier, grown up version of the Crispy Sheet Pan Roasted Potatoes and if you like carbs/ things that are loaded with flavor + easy to make – you are gonna be a fan of these!
(I mean, let’s be real WHO doesn’t like carbs in any/all forms??)
I’m not going to lie… sweet potatoes are by no means my favorite side dish. I will pick white potatoes over sweet potatoes EVERY time. I find that when the potatoes are not prepared correctly, they can become super mushy, and just bleh.
When I’m eating potatoes they either have to be crispy (like Baked Sweet Potato Fries) or mashed (like these Paleo Maple Whipped Sweet Potatoes)… I don’t want something in between! Unless they are made into delicious Sweet Potato Gnocchi!
Thankfully, these potatoes actually get crispy on the outside which I have yet to find in other roasted potato recipes, and the garlic thyme flavor combo is seriously yummy!
I love pairing these alongside chicken or steak for dinner – but they’re also great for meal prepping and putting in a veggie/grain bowl if that’s your jam! Since they’re paleo, whole 30 and vegan – pretty much anyone can enjoy them!
Cubed Roasted Sweet Potatoes ingredients
To make these cubed sweet potatoes you’ll need:
- sweet potatoes
- olive oil
- salt, pepper
- garlic powder
- fresh or dried thyme
You’ll also need: a baking sheet, and parchment paper

These potatoes are definitely going to be a new staple for your dinners, lunches, and meal prepping!
They’re super simple, taste amazing + go well with just about anything! I think you’re going to love them just as much as we do!
Cubed Roasted Sweet Potatoes substitutions
Potatoes– Any sweet potato will work in this recipe. If you want to use white potatoes, we recommend our Crispy Potatoes, Mexican Potatoes, or Dijon Roasted Potatoes. For a delicious mashed recipe, try our Healthier Mashed Potatoes. These Potato Wedges are also delicious!
Spices – You can leave the garlic/thyme out if that isn’t your thing or sub in something like dried parsley or oregano. I usually use fresh thyme, but dried thyme works great in this recipe too! You can really use any combo of spices in this recipe. Feel free to omit garlic, or salt + pepper to your taste. You can also use 1 tablespoon of your favorite spice blend.
Oil – You can use coconut oil or avocado oil. I like olive oil best.
How to cut sweet potatoes for Cubed Sweet Potatoes in Oven
The best way to cube sweet potatoes is:
- Wash the potatoes very well. Make sure to scrub the outside. You can peel the potatoes but we like to keep the skin on.
- Using a sharp knife (watch your fingers!) Slice the potato longways to make a flat surface.
- Lay the potato on the flat surface. Cut lengthwise into thick strips, they cut short side into cubes.

Can you buy cubed sweet potatoes?
Yes! Some stores have precut sweet potatoes. I prefer to cut my own, but you can save some time with pre-cut potatoes.
Some stores have cubed sweet potatoes, especially around the holidays, but you might not be able to find them in every grocery store.
How to Roast Sweet Potato Cubes
These roasted sweet potato cubes couldn’t be easier to make.
- Preheat oven to 450° + line a cookie sheet with parchment paper.
- While oven preheats, cut sweet potatoes into small half inch pieces.
- In a bowl, toss together chopped potatoes, olive oil + spices. Make sure all pieces are evenly coated.
- Spread out potatoes on lined baking sheet. Bake for 20 minutes, then flip potatoes to make sure sides are getting evenly cooked. Bake potatoes for an additional 15 minutes until potatoes are crispy/browned.



Tips for Baked Sweet Potato Cubes
Getting crispy potatoes is not as hard as you think! Here are a few things to do for super crispy oven roasted potatoes:
- Cut in small pieces- Cut the potatoes into 1/2 inch small pieces so they can get browned on all edges. Larger pieces will work but will need more time.
- Evenly cut potatoes- Make sure you evenly coat all the potatoes with olive oil and spices. The olive oil will help the potatoes get crispy when roasting!
- Keep your oven at a high temp. Roasting the potatoes at 450 for almost an hour is what will give them that perfectly crunchy outside! If your potatoes don’t seem crispy after 40 minutes, maybe give them a few more minutes or broil them. Everyone’s oven is a little different and yours just may require a few more minutes!
- Use parchment paper– non stick foil or baking sheets will not do the trick. Parchment paper allows the potatoes to roast without sticking!
- Evenly spread out the potatoes – Don’t stack them on top of one another – spread your potatoes out on the baking sheet and try not to overcrowd them.

Storing Roasted Sweet Potato Cubes
Storing: This will last in the refrigerator for up to 5 days in an airtight container
Freezing: You can freeze this recipe for up to 3 months. We like these containers for freezing.
Reheating: You can reheat this recipe in the microwave, toaster oven, oven or on the stove.

Roasted Sweet Potatoes FAQs
You can soak sweet potatoes before roasting, but you don’t have to!
If your sweet potatoes aren’t crispy it could be because you didn’t cook them for long enough, or because they weren’t cooked at a high enough temperature.
No, you don’t need to parboil sweet potatoes before roasting.
Your sweet potatoes might be soggy if you didn’t cook them for long enough at a high temperature. Sweet potatoes need to cook for a long time at a high temp to be thoroughly cooked!
The best temperature to bake sweet potatoes is at 450 degrees F.
Reheating Cubed Sweet Potatoes in Oven & Pan
To reheat in your oven or toaster oven, set the oven to 350. Line a baking sheet with parchment paper or a silpat liner. Place in the oven for 5-10 minutes, tossing halfway, until potatoes are warm and crisp on the outside.
To reheat in a pan: spray your pan lightly with olive oil. Turn up to high heat. Add potatoes to the pan. Heat for 4-5 minutes, until potatoes are crisp on the outside, stirring occasionally.
Microwave: If you microwave the potatoes they will not be as crispy!

Air Fryer Instructions
- *IMPORTANT NOTE* FOR AIR FRYER: USE 1/2 THE AMOUNT OF OIL – you only need 1.5 tablespoon of oil
- Preheat your airfryer to 400 degrees for 5 minutes.
- While air fryer preheats, cut sweet potatoes into small half inch pieces.
- In a bowl, toss together chopped potatoes, olive oil + spices. Make sure all pieces are evenly coated.
- Air Fry at 400 for 20 -25 minutes. If your air fryer has a basket, remove it at 10 minutes, shake, and return to cooking. This allows the potatoes to cook evenly. Every air fryer is different so check after 20 minutes to make sure they don't burn!

Hi Jenny – I’d recommend keeping this recipe as is! It’s delicious with the garlic and thyme. If you don’t like garlic I’d omit it. If you don’t like thyme I would sub for rosemary!

Hi Jenny,
I added a 1/4 tsp ground red pepper flakes to the roasting mix. Then after they were done I sprinkled citrus zest over it immediately.
The freshness of the citrus with the back heat of the red pepper makes this recipe addicting.
I first used tangerine because that’s what I had on hand. I’ve used many different citrus varieties and I found for our taste the tangerine #1, grapefruit #2, lime#3 and orange #4.
Be bold and experiment with combos or new herbal combinations.
My Greek family taught me very young to smell what you want to season in one palm and the herb or spice you wonder about using in the other palm and smell them together. If the aroma is sweet and inviting it’s a go to try. If it makes you snap away because it’s bitter or sour smelling it’s not a good idea to use it.
I’m in my sixties now and still use the method., especially when trying out new foods.

I love this recipe. I’ve been making this for years.
I have added one little thing to the recipe that really made a nice refreshing difference.
I sprinkle a little citrus zest over the whole batch immediately after taking it from the oven.
So far tangerine has been my favorite and then grapefruit but, lemon and lime were tasty too.
