Preheat the oven to 450 degrees F and prepare a parchment lined baking sheet.
In a small bowl or measuring cup, mix together the marinade.
In a large bowl, combine marinade, chicken thighs, peppers, potatoes, tomatoes, olives and onions. Stir until everything is evenly coated in the marinade. Marinate for 10 minutes at room temperature.
Place marinated chicken and vegetable mixture on a prepared parchment lined baking sheet.
Bake at 450 for 20-25 minutes until chicken is browned. Top with feta and enjoy!
