Greek Chicken Thigh Recipe Ingredients
To make this sheet pan greek lemon chicken dinner you’ll need:
- chicken thighs
- bell peppers, potatoes, cherry tomatoes
- kalamata olives, onions
- crumbled feta cheese (optional)
- olive oil, red wine vinegar
- garlic powder, dried oregano, dried parsley
- salt & pepper

How to make Baked Greek Chicken Thighs
- Mix together the greek chicken marinade.
- In a large bowl, combine marinade, chicken thighs, and vegetables. Let marinate for 10 minutes (30 minutes at most).
- Place marinated chicken/veggies on a parchment lined baking sheet.
- Bake at 450° for 30 minutes until chicken is cooked and browned. Top with feta cheese and enjoy!




Greek Chicken Recipe Substitutions
Olive Oil: You can substitute avocado oil in place of olive oil in the marinade
Red Wine Vinegar: Can be replaced with lemon juice to make it more of a greek lemon chicken. Balsamic vinegar will also work but it will add a different flavor.
Marinade: You could also use this Greek Dressing in place of the chicken marinade in this recipe.
Chicken Thighs: You can substitute the boneless skinless chicken thighs with boneless chicken breasts or chicken tenders. Bone in chicken thighs will also work, but they’ll need more time. For bone in thighs, try this Baked Chicken Thighs Recipe.
Vegetables: Feel free to use more or less vegetables. Broccoli or halved brussels sprouts will also work in place of the vegetables.
Tomatoes: You can use cherry or grape tomatoes.
Kalamata Olives: You can omit the olives or use black olives.
To Make it Lower Carb: Sub cauliflower florets for potatoes.

How to store Greek Chicken
Storing: These cooked chicken thighs will last in the refrigerator for up to 3 days in an airtight container
Freezing: You can freeze this recipe for up to 3 months. We like these containers for freezing !
Potatoes can get a little bit of an odd texture when frozen, but they’ll still be enjoyable!
Reheating: You can reheat this recipe in the microwave, toaster oven, oven (in a baking dish), or on the stove.

Greek Chicken Thighs FAQs
Chicken thighs cook well in the oven, crockpot or on the stove. There’s no wrong way to cook chicken thighs!
It’s best to cook chicken thighs slowly. This will help keep them tender and juicy!
Chicken thighs do get more tender the longer they cook, depending on the method. If you’re cooking chicken thighs in the crockpot on low heat they will get very tender. However, if you’re baking chicken thighs in the oven, eventually they will start to dry out.
The secret to juicy chicken is not over cooking it. Cook chicken to an internal temperature of 165 degrees.

Greek Chicken Thighs Recipe
Ingredients
Marinade:
- ¼ cup olive oil
- ¼ cup red wine vinegar or lemon juice
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 2 teaspoon garlic powder
- 2 teaspoon dried oregano
- 2 teaspoon dried parsley
Chicken & Veggies
- 1.5 lbs boneless, skinless chicken thighs
- 4 cups bell peppers, cut in squares cut in squares – 2 peppers
- 2 cups potatoes cut into cubes
- 1 cup cherry tomatoes
- 1/2 cup kalamata olives quartered
- ½ cup onions thinly sliced
- 1/4 cup crumbled feta reserved- optional
Instructions
- Preheat oven to 450 degrees and prepare a parchment lined baking sheet.
- In a bowl or measuring cup, mix together the marinade.
- In a large bowl, combine marinade, chicken thighs, and vegetables. Let marinate for 10 minutes (30 minutes at most).
- Place marinated chicken/veggies on a parchment lined baking sheet.
- Bake at 450 for 30 minutes until chicken is browned. Top with feta and enjoy!
