All kidding aside, if you haven’t made a sheet pan meal, they’re the best!
why we love healthy sheet pan meals:
There is a lot to love about sheet pan dinners. It’s one of our favorite ways to cook a healthy dinner because they’re:
- Easy to prepare
- Easy to clean up
- Great for meal prep or busy weeknight dinners
- Minimal equipment needed (no pots, pans, etc.. just one baking sheet!)
We can tend to make the same sheet pan meals over and over again, (this Maple Mustard Chicken is my favorite!) but I like to switch it up from time to time.

Tips for Sheet Pan Meals
Try to have some variation of flavor – It can be tempting to just toss the same marinade on everything, and sometimes I do this. However, I do try to mix it up a little bit. Spices are a great way to make a one pan meal taste like it’s got a variety of flavor.. for example, you can toss one veggie in garlic and a different one in rosemary and pepper. Both equally delicious, but different!
Parchment paper> aluminum foil. I love using my reusable silpat baking sheets, but if you’re in a time crunch and want to toss your liner after baking, NOTHING sticks to parchment paper in my experience.
You don’t want to waste time trying to pull stuck food off of foil… parchment paper is way better! (One thing to note though, if you’re going to be broiling for more than 3-4 minutes, parchment paper can burn.)
You can add your food in at different times. Sometimes a meat, potato and veggie can’t all cook at the same time. That’s why I like to add things in at stages. For example.. green beans and chicken don’t take the same amount of time to cook.
So you can cook the chicken for 15 minutes, then add green beans to the sheet, and bake for another 10ish minutes.
Don’t over crowd the pan! If you over crowd the pan, you’re gonna end up with a mushy mess!
You need to have some space around the pan for air to flow and get everything perfectly cooked. This large baking sheet is great for sheet pan meals.
Best Baking Sheets for Sheet Pan Dinners
Before I share all the recipes, I wanted to share some tips for making sheet pan meals.

Healthy Sheet Pan Chicken Dinner
- Clean, cut and pound chicken until thin. This is optional, but will help to make the chicken tender + ensure it cooks evenly.
- In a separate bowl, combine all ingredients for the marinade. It should be thick. Add chicken, brussels and potatoes to a ziploc bag or bowl and cover with marinade. Toss everything to coat evenly.
- Marinate for a minimum of 5 minutes (The longer you can marinate, the better. 30 mins – 1 hour is perfect, but overnight is best.)
- Lay brussels/potatoes on sheet next to chicken.
- Bake at 400 for 25-30 minutes until chicken starts to brown. You can broil for 2-3 minutes to get a crispier finish if you prefer.
- Herbs: If you don’t like rosemary, you can sub basil or thyme. Either one would be delicious in this dish!
- Chicken: If you don’t have chicken breasts, you can use chicken thighs or even chicken tenders
- Veggies: You can sub brussels sprouts with broccoli or butternut squash
- Potatoes: You can sub fingerling potatoes for russet potatoes cut in roughly the same size
