Sausage, peppers, potatoes, and onions was a classic meal that my family would always make for a quick weeknight meal growing up.

This sheet pan dinner is quick to prepare and requires minimal cleanup, a true ‘pop it in the oven and check it when it’s done’ recipe. Great for a busy weeknight or a quick meal.

Tyler’s Tips for the Best Sausage Peppers Potatoes and Onions

  • Slice the onions and peppers thinly so they caramelize and add flavor while baking alongside the sausage and peppers on the sheet pan. Slicing the peppers and onions thin helps them cook quickly and melt together with flavor.
  • Look for sausage with clean ingredients. It can be hard to find good quality sausage. We like to get ours from a local butcher, but most meat counters in the store will have good options!

Olive Oil: You could use avocado oil, but we really recommend extra virgin olive oil.

Potatoes: Russet potatoes work well in this recipe, but you can easily use yukon gold or red potatoes. Baby potatoes cut in half would work great, too.

Peppers: Sweet red, yellow, and orange peppers are ideal for this recipe. Green peppers can be used, but they are not as sweet. Hot Italian peppers like cherry peppers, Italian long hots can be included for more of a kick, but I would use a small amount (1/4 cup) so we don’t overpower the dish with heat.

Onions: Yellow onions, red onions, and white onions will all work in this recipe.

Garlic: Fresh crushed garlic gives us that sweet pungent flavor, but garlic powder can be used in lieu; it can also be omitted if needed.

Sweet Italian Sausage: Hot Italian sausage can be used in place of sweet Italian sausage. We used traditional sweet Italian pork sausage, but feel free to use chicken sausage, turkey sausage, or lamb sausage!

Dried Oregano: Sicilian oregano is my favorite type of Italian oregano to use, but most store bought dried oregano will suffice. You could also substitute Italian seasoning if needed, but we prefer it as written.

Cheese: Topping this sheet pan sausage and peppers dish with freshly grated parmesan cheese is fantastic, but feel free to use mozzarella, fontina, or asiago for some different flavor profiles. Omit the cheese if you are looking for a dairy-free option.

Fresh Herbs: The fresh basil and parsley give this recipe a fresh herby flavor, but if needed, they can be substituted with 1/4 teaspoon dried basil and parsley.

Optional – Tomatoes: Some people like to have more of a saucy sausage and peppers dish; if that’s your style, I recommend adding 1 cup of crushed tomatoes to the sheet pan before baking.

How to Make Sheet Pan Sausage Peppers Potatoes and Onions

  1. Put the potatoes, bell peppers, yellow onion, and garlic on a parchment lined baking sheet.

  1. Place Italian sausage on top. Then drizzle oil, sprinkle with spices, and mix until evenly coated.

  1. Bake at 425° for 30 minutes. Top with Parmesan cheese and fresh herbs.

What to Serve with Sheet Pan Sausage Peppers Potatoes and Onions

A loaf of Italian bread with organic olive oil or butter is my favorite way to indulge while eating this recipe.

This sheet pan dinner is filled with protein, veggies, and potatoes for a filling meal, but here are a few side salad options for this meal: Caprese Pasta Salad, Spinach Strawberry Salad, Healthy Pasta Salad, and Easy Blueberry Spinach Salad.

storage

Storing: This will last in the refrigerator for up to 4 days in an airtight container.

Freezing: You can freeze this recipe for up to 3 months. We like these containers for freezing.

Reheating: We recommend reheating this recipe in the toaster oven, oven or on the stovetop in a greased skillet.

Ingredients

  • 1 pound cubed russet potatoes cut into ¼ inch pieces
  • 3 cups thinly sliced red bell peppers 3 large peppers
  • 1 cup thinly sliced yellow onion 1 large onion
  • 1 ½ tablespoons minced garlic
  • 2 pounds raw sliced sweet Italian sausage ½ inch pieces
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon dried oregano sicilian oregano is ideal
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • ½ cup parmesan cheese
  • ¼ cup minced fresh basil
  • ¼ cup minced fresh parsley

Instructions

  1. Preheat the oven to 425 degrees F.
  2. While the oven is coming to temperature, prepare a large parchment lined baking sheet.
  3. Add the potatoes, bell peppers, yellow onion, and garlic to the parchment lined baking sheet.
  4. Place the sliced sweet italian sausage on top of the vegetables and potatoes.
  5. Drizzle the tablespoon of olive oil over the sheet, then sprinkle with oregano, black pepper, and salt over the top. Mix together with a pair of tongs or use your hands to evenly coat all of the ingredients.
  6. Bake in the oven at 425 degrees F for 30 minutes. You can turn the oven to broil for 2 minutes and get some nice brown and caramelization to finish.
  7. The sausage should be nicely browned and the peppers, onions, and potatoes should be fork tender.
  8. Top with the parmesan cheese, fresh basil and fresh parsley.

Hot Italian sausage is another great option if you enjoy spicy flavors.
This is my favorite recipe for meal prep, the flavors continue to combine together and reheating in the oven or stovetop is an easy way to make use of these delicious leftovers.

    So good and easy! We normally eat chicken sausage but I was at Costco so grabbed some of their mild Italian sausages. We loved it! I will definitely take this again trying some other types of sausage.
