While the oven is coming to temperature, prepare a large parchment lined baking sheet.
Add the potatoes, bell peppers, yellow onion, and garlic to the parchment lined baking sheet.
Place the sliced sweet italian sausage on top of the vegetables and potatoes.
Drizzle the tablespoon of olive oil over the sheet, then sprinkle with oregano, black pepper, and salt over the top. Mix together with a pair of tongs or use your hands to evenly coat all of the ingredients.
Bake in the oven at 425 degrees F for 30 minutes. You can turn the oven to broil for 2 minutes and get some nice brown and caramelization to finish.
The sausage should be nicely browned and the peppers, onions, and potatoes should be fork tender.
Top with the parmesan cheese, fresh basil and fresh parsley.
