A delicious Chicken Drumsticks Dinner that’s packed with flavor! Baked on one sheet pan, it’s easy to clean up and loaded with protein.

This easy chicken drumsticks recipe was a childhood favorite of mine. When my parents were looking for a simple meal to throw together in just a few minutes, this was always a go to easy weeknight dinner.

This is a great dinner option to throw together when you are short on time and looking to reduce the dishwashing! No marinating and minimal prep but plenty of flavor in this baked chicken drumsticks recipe that bakes all together in the oven and caramelizes, creating a delicious meal.

It’s also so versatile! Try swapping the chicken drumsticks for chicken breasts, thighs, wings, even pork chops ot pork tenderloin!

Great for meal prep, this recipe is a complete meal in itself (protein, veggies & carbs!) and you can easily reheat this in the oven or toaster oven. Want to make it less messy? Remove the meat from the bones and store in airtight containers for the next 3 days and enjoy!

liz’s top tips for chicken drumstick dinner

  • Pat dry your chicken drumsticks dry and season them with a sprinkle of salt before placing on your cookie sheet, about 10 minutes. This will draw out some moisture and make for tender crispy chicken. 
  • Add more vegetables! This is a great dish and many different veggies can be added like Brussels sprouts, mushrooms, and butternut squash.

Substitutions

Chicken Drumsticks: This recipe is great for chicken drumsticks since they are affordable and pack a ton of flavor but you can easily swap them for bone-in chicken breast, boneless chicken breast, chicken wings, and chicken thighs! Pork tenderloin and pork chops would be great too, you may just need to modify the cooking time so they don’t dry out. Chicken should be cooked to 165°, pork should be cooked to 145° internal temp.

Potatoes: Russet and Yukon golds work well, but sweet potatoes or yams would be a great option here, too.

Carrots: Large carrots work best in this recipe since they bake for a full hour in the oven.

Other Vegetables: You can really get creative with vegetables here, whatever your favorites are will absolutely work well. Brussels sprouts, broccoli, asparagus, green beans, peppers and even celery!

Olive Oil: You can substitute avocado oil, butter, coconut oil, beef tallow, or ghee.

Spices: The Italian seasonings are delicious in this recipe but if you want to spice it up try using your favorite BBQ rub, cajun seasoning, and even lemon pepper would be tasty!

How to Make Chicken Drumstick Dinner

  1. Chop carrots, potatoes, and onions. Pat chicken dry with paper towels and place on a parchment paper lined sheet pan, add the chopped vegetables and potatoes as well.

  1. Coat the ingredients with olive oil and your seasoning, mix together to coat evenly.

  1. Place the sheet pan in the middle rack of your oven and bake at 400° for 1 hour. Finish by broiling for 3-5 minutes to get some crispy edges, serve and enjoy!

Storage

Storing: Cooked chicken drumsticks will last in the refrigerator for up to 4 days in an airtight container. This is a great recipe for meal prepping and having some leftovers stored in the fridge for days to come!

Freezing: We don’t recommend freezing this recipe as the vegetables will get very mushy when reheating. The chicken may also get dry when thawed.

Reheating: You can reheat this recipe in the toaster oven, oven, air fryer, or on the stove. The microwave will work too but I find that it gives the chicken a funny texture.

This easy sheet pan chicken drumstick dinner is packed with flavor. This is a high protein recipe packed with veggies that is affordable and easy to make!

Serves : 6 2 cup serving (about 3 drumsticks)

Ingredients

  • 4 pounds chicken drumsticks 10-12 drumsticks
  • 4 cups cubed potatoes russets or yukon golds, about 1.5 lbs
  • 4 cups carrots roughly chopped (about 8 large carrots)
  • 2 cups sliced onions about 2 large onions chopped into thick half circles
  • 3 tablespoons roughly chopped garlic about 6 garlic cloves
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon premade italian seasoning mix

Instructions

  1. Preheat the oven to 400 degrees and prepare a parchment lined baking sheet.
  2. Cut potatoes in 1 inch cubes.
  3. Peel and cut each carrot into 4 pieces. Peel the onion and slice it in half, cutting in large half circles. (See above for sizes)
  4. Pat drumsticks dry with a paper towel. Place drumsticks on a lined cookie sheet, spreading them apart so there is space in between them.
  5. Take chopped potatoes, carrots, onion and garlic and place them in between the drumsticks on your cookie sheet.
  6. Pour olive oil evenly across the chicken and potatoes, then sprinkle with spices.
  7. Mix the oil and seasoning with a pair of tongs or your hands so that all pieces are evenly coated (This is where food grade gloves come in handy.)
  8. Place the sheet pan in the middle rack of your oven and cook at 400 degrees for 1 hour. If you want to get some extra crispiness on the tops of your drumsticks and vegetables, turn your oven to the broil setting and broil for 3-5 minutes once finished cooking. Serve and enjoy!

Swap out the white potatoes for sweet potatoes!
Cut up a few strips of bacon or sausage and sprinkle throughout the baking dish for some added flavor.
Looking for some sweet heat? Add a tablespoon of honey and a sprinkle of cayenne pepper or crushed red pepper flakes for an extra kick!
