It’s got all the makings of a good salad recipe: fresh greens, sweet blueberries, salty feta, and a zesty citrus dressing that is SO delicious.

Ingredients for Blueberry Spinach Salad
To make this delicious summer salad you’ll need:
- spinach & arugula
- blueberries
- sliced almonds
- crumbled feta cheese
- cucumbers, avocado
For the dressing you’ll need:
- olive oil
- orange zest/ orange juice
- lemon zest/lemon juice
- dijon mustard
- maple syrup
- black pepper

How to Make Arugula Blueberry Salad
- In a large bowl, assemble salad.
- Set the salad aside and prepare the dressing.
- Store in the refrigerator for up to 4 days.

SUBSTITUTIONS FOR BLUEBERRY FETA SALAD
Spinach/Arugula: You can use any salad greens in this recipe. Spring mix will also work.
Blueberries: You can use strawberries or fresh raspberries in place of fresh blueberries.
Sliced Almonds: You can use sunflower seeds or skip the nuts to make this nut free.
Cheese: You can use crumbled goat cheese or blue cheese in place of feta cheese.
Cucumbers: You can skip the cucumbers or sub in tomatoes.
Avocado: You can skip the avocados or add in more cucumber.
Olive Oil: You can substitute extra virgin olive oil with avocado oil
Citrus: You can use more or less citrus juices/zests if you prefer.
Dijon Mustard: You can substitute dijon mustard with whole grain mustard or even yellow mustard.
Maple Syrup: You can substitute honey in place of maple syrup.

Blueberry Salad FAQ
Yes! Blueberries go great in salad! They’re a healthy and delicious addition to any salad. They pair well with avocado and cucumber.
Balsamic or citrus salad dressing is great with blueberries in a salad! We love this Honey Lemon Dressing.
Frozen blueberries don’t work well in a salad. They are very mushy and syrupy. It’s best to use fresh blueberries in a salad instead of frozen.
How to Store Blueberry Salad
Storing: This salad will last in the refrigerator for up to 3 days in an airtight container. The dressing will last for up to 5 days in the refrigerator.
We recommend storing the salad and dressing separately.

Easy Blueberry Salad
Ingredients
- 2 cups spinach
- 2 cups arugula
- ¼ cup blueberries
- ¼ cup sliced almonds
- ¼ cup crumbled feta cheese
- ¼ cup cucumbers
- ¼ cup diced avocado
Citrus Dressing
- 1.5 tablespoons olive oil
- 1/2 tablespoon orange zest
- 1/2 tablespoon orange juice Freshly squeezed – juice of one orange
- 1/2 tablespoon lemon zest
- 1/2 tablespoon lemon juice juice of one lemon
- 1/2 teaspoon dijon mustard
- 1/4 teaspoon maple syrup
- ¼ teaspoon pepper
Instructions
- In a large bowl, assemble salad. Toss spinach and arugula with blueberries, almonds, feta cheese, cucumbers and diced avocado.
- Set the salad aside and prepare the dressing.
- In a food processor or small blender, combine all ingredients until smooth.
- Store in the refrigerator for up to 4 days.

had this for lunch today! This dressing is so bright and fruity, it was DELICIOUS! Liz is spot on with the substitutions, I used goat instead of feta because that’s what I had, I also had candied pecans not almonds and that fit in great too. What a great lunch!! This is a delicious salad, I left off the nuts because I didnt have any but added chicken to make a little more filling. I really liked the creamy avocado with the blueberries and feta and the dressing was zesty and delicious. I even cut up my greens like I have seen Liz do and will definitely do that more often.

Such a delicious salad! The best part was I had all the ingredients already on hand so no extra trip to the grocery store. I had this salad twice today and I have a feeling I’ll be having it quite a few more times before the week is done. Might add some grilled chicken and bacon bits for a more hearty work lunch.
