Blueberry Salad

This Easy Blueberry Salad is a delicious summer salad. A Healthy Blueberry Spinach Salad made with feta, blueberries and homemade dressing.

If you’re looking for an easy summer side dish, try this Blueberry Spinach Salad! It’s super easy to make in about 10 minutes, and is SO delicious.
It’s got all the makings of a good salad recipe: fresh greens, sweet blueberries, salty feta, and a zesty citrus dressing that is so bright and fresh. You probably have everything you need to make this salad recipe in your pantry, but if not there are so many substitutions.
There’s nothing better than a fresh salad. Whether it’s Butternut Squash Salad, Spinach Strawberry Salad or Apple Cranberry Walnut Salad – salads are my favorite side dish!
liz’s tips for blueberry salad
- While storing your salad greens, put a paper towel in the container with the greens to absorb the moisture to keep them fresh.
- Double the blueberries if you want, especially if they are in season! The flavor and taste are unmatched!
Ingredients

Substitutions
Spinach/Arugula: You can use any salad leafy green in this recipe (baby spinach, romaine lettuce, baby kale, etc). Spring mix will also work.
Blueberries: You can use strawberries or fresh raspberries in place of fresh blueberries. Frozen blueberries don’t work well in a salad. They are very mushy and syrupy.
Sliced Almonds: You can use sunflower seeds, walnuts, or skip the nuts to make this nut free.
Cheese: You can use crumbled goat cheese or blue cheese in place of feta cheese.
Cucumbers: You can skip the cucumbers or sub in tomatoes.
Avocado: You can skip the avocados or add in more cucumber.
Salad Dressings: Balsamic Vinaigrette or citrus salad dressing is great with blueberries in a salad! We love this Honey Lemon Dressing or Strawberry Vinaigrette.
Olive Oil: You can substitute extra virgin olive oil with avocado oil
Citrus: You can use more or less citrus juices/zests if you prefer.
Dijon Mustard: You can substitute dijon mustard with whole grain mustard or even yellow mustard.
Maple Syrup: You can substitute honey in place of maple syrup.
Extra Toppings: Try topping with Homemade Healthy Croutons.
How to Make Arugula Blueberry Salad

In a large bowl, assemble salad and toss with dressing.

Storage
Storing: This salad will last in the fridge for up to 3 days in an airtight container. The dressing will last for up to 5 days in the refrigerator.
We recommend storing the salad and dressing separately.

Easy Blueberry Salad
Ingredients
- 2 cups spinach
- 2 cups arugula
- ¼ cup blueberries
- ¼ cup sliced almonds
- ¼ cup crumbled feta cheese
- ¼ cup cucumbers
- ¼ cup diced avocado
Citrus Dressing
- 1 ½ tablespoons olive oil
- ½ tablespoon lemon zest
- ½ tablespoon lemon juice juice of one lemon
- ½ tablespoon orange zest
- ½ tablespoon orange juice Freshly squeezed
- ½ teaspoon dijon mustard
- ¼ teaspoon black pepper
- ¼ teaspoon maple syrup
Instructions
- In a large bowl, assemble salad. Toss spinach and arugula with blueberries, almonds, feta cheese, cucumbers and diced avocado.
- Set the salad aside and prepare the dressing.
- In a food processor or small blender, combine all ingredients until smooth.
- Store in the refrigerator for up to 4 days.

Such a delicious salad! The best part was I had all the ingredients already on hand so no extra trip to the grocery store. I had this salad twice today and I have a feeling I’ll be having it quite a few more times before the week is done. Might add some grilled chicken and bacon bits for a more hearty work lunch.

We had this for dinner tonight and it was delicious! The perfect blend of flavors and I feel like I could drink the dressing. We added diced grilled chicken to make it a complete meal.

This is a delicious salad, I left off the nuts because I didnt have any but added chicken to make a little more filling. I really liked the creamy avocado with the blueberries and feta and the dressing was zesty and delicious. I even cut up my greens like I have seen Liz do and will definitely do that more often.
had this for lunch today! This dressing is so bright and fruity, it was DELICIOUS! Liz is spot on with the substitutions, I used goat instead of feta because that’s what I had, I also had candied pecans not almonds and that fit in great too. What a great lunch!!
