Sheet pan meals are the best because they only require one dish (who doesn’t want to do less dishes!) and they’re just EASY!
We love this sheet pan breakfast for being both super easy + for the minimal dishes it requires.. and for a few other reasons:
Why we love this Sheet Pan Breakfast
We are all about EASY when it comes to cooking, especially when it comes to breakfast.
- Protein Packed/ Veggie Loaded – This easy sheet pan breakfast is a great way to start of your morning. It’s high in protein (17g per serving!) and loaded with veggies which will help keep you full.
- Paleo/Whole30 – We follow a mainly paleo/whole30 diet and this is great if you do too! These easy sheet pan eggs + sides are gluten/grain/dairy/soy/sugar free.
- Meal Prep Friendly – Easily meal prep breakfast by making this breakfast on Sunday (or whenever!) and enjoying it throughout the week! I put it in containers so it’s pre portioned + ready to eat.

Ingredients for sheet pan breakfast:
To make this sheet pan breakfast you’ll need:
- sweet potatoes
- broccoli
- bell peppers
- oil
- garlic powder, onion powder
- pepper, salt
- eggs

How to make sheet pan eggs:
The key to this sheet pan breakfast (and most sheet pan meals) is cooking in layers. Potatoes, broccoli, and eggs all require different cooking times, but you can still make them all in one sheet pan.
- Preheat your oven. Chop potatoes/broccoli. Toss with ½ tablespoon of oil until coated. Add potatoes to the sheet pan and bake for 10 minutes.
- While potatoes are baking, prepare peppers. Remove top/seeds. Slice peppers in ½ inch thick rings.
- While potatoes cook, toss the broccoli in the remaining ½ tablespoon of olive oil.
- After the potatoes are partially cooked (after 10 minutes), reduce the heat to 350. Add broccoli and pepper rings to the pan. Cook for 5 minutes.
- While potatoes/broccoli + pepper rings cook, mix together spices.
- After 5 minutes, crack eggs into pepper rings. Sprinkle everything with spice mixture and return to the oven for 5-7 minutes, or until your eggs are cooked to your liking. 5 minutes will give you a runnier egg, while 7 minutes will give you a harder egg.




Substitutions for this healthy breakfast recipe:
Potatoes: You can substitute russet or any potatoes you like
Oil: You can substitute avocado oil, refined coconut oil, or even melted butter in place of olive oil
Broccoli: I haven’t tried it, but I think that brussel sprouts would be a good replacement for broccoli. You can also add more veggies – mushrooms, peppers, zucchini, etc. Just adjust your cooking time according.
Peppers: Any color bell pepper will work.
Spices: Feel free to use any spices you like. You can top with sriracha for spice, or whatever hot sauce you like!
Keto: Omit the potatoes to make this recipe keto friendly.
Meat: You can add frozen sausage, or bacon to the sheet pan if you’d like! This breakfast sausage is our favorite. ButcherBox’s bacon is our favorite bacon!
Eggs: Feel free to add more eggs/peppers if you want more protein! or try egg whites!
Serving this sheet pan breakfast bake
This is a complete breakfast in itself, but it is delicious topped with fresh herbs like green onions or fresh chives. Sesame seeds may be a good topping as well! You could also top the eggs with shredded cheese.

How to store this meal prep breakfast:
Storing: We store these eggs/veggies/potatoes in glass containers in our refrigerator for up to 4 days.

Ingredients

This is my new favorite breakfast!! The eggs come out perfect within the pepper slices, and it looks as good as it tastes. I followed the recipe exactly, but plan to try variations on the veggies depending on what I have on hand – excellent recipe 😃
