Most of the time, when people choose to eat a salad, it’s because they are trying to make a healthier food choice or to get more veggies in their diet. However, so often that healthier choice is negated by the dressing that contains weird fillers, added sugar, and cheaper oils.
That’s why we love making our own salad dressings at home; plus, it could not be easier and tastes so much better than anything you could get in the store.
This traditional Greek salad dressing is bright, delicious, and comes together with just a few pantry staples and less than 5 minutes! It tastes great on salads and as a marinade for chicken (like these Greek Chicken Kabobs) or other proteins.
Greek dressing has a light and tangy flavor that is made of red wine vinegar, lemon juice, olive oil, and spices. It’s great on a Greek salad! It’s similar to Italian dressing, but with a more Mediterranean twist.

liz’s tips for homemade greek dressing
- Always use fresh lemon juice, not the bottled stuff. Bottled lemon juice is too bitter, and the dressing will not be as good.
- Shake it up in a mason jar if your dressing separates when storing.

Substitutions
Olive Oil: You can substitute avocado oil with olive oil.
Red Wine Vinegar: We can’t offer any substitutions for red wine vinegar. Balsamic vinegar would work, but it would be overpowering here and not really taste like ‘Greek’ dressing.
Lemon Juice: Do not use bottled lemon juice. Always use fresh lemon juice. Bottled lemon juice is too bitter and will not taste the same.
Dried Herbs: You can substitute fresh herbs in place of dried herbs. Double the amount of fresh herbs for dried herbs and make sure to chop them very well.
How to make homemade Greek Dressing

- Combine all ingredients in a jar and shake vigorously until combined.
- Serve over a salad, or greek pasta salad, or use it as a marinade for grilled veggies or chicken.

This salad dressing recipe tastes bright and a little bit tangy. You can taste the smooth olive oil, the bright zippy-ness from the lemons, and then all the dried herbs.
It’s delicious! If you’ve ever had marinated kalamata olives, it has a similar taste.

Storing: This Greek vinegarette is best enjoyed the same day but will last in the refrigerator for up to 4 days if you have leftover dressing.
Freezing: We don’t recommend freezing this salad dressing. It’s best if eaten fresh.

Greek Vinaigrette Dressing
Ingredients
- ⅓ cup red wine vinegar
- 2 tablespoons lemon juice juice of one lemon
- ½ cup olive oil
- ¼ teaspoon salt
- ¼ teaspoon black pepper
