Ingredients
2cupcucumberdiced finely in small squares
2cuppeachesdiced finely in small squares
1cuponiondiced finely in small squares
2tablespoonsjalapeñoseeds removed, diced finely
3tablespoonsfresh cilantrochopped
1/2tablespoonolive oil
1/2teaspoonblack pepper
1teaspoonsea salt
2tablespoonslime juicejuice of 2 limes

Instructions
Finely chop cucumber, onion, peaches and jalapeño
In a large bowl, mix all ingredients until thoroughly combined.
Enjoy with chips, or serve over grilled chicken/fish for a fun summer twist!
Notes
This salsa is best if left in the fridge for 1-2 hours for the flavors to meld together, but it's also fine to eat right after making!Substitutions for this recipe:
Jalapeño- You can omit the jalapeño to cut back on spice
Cilantro- I know that not everyone loves cilantro - if you're not a fam, omit it
Fruit- If you don't have peaches on hand, pineapple, mango or every strawberries will go well in this recipe!
