There are two options for soaking almonds.Room Temperature Water: Soak almonds in 3 cups of filtered water for a minimum of 12 hours. Hot Water: You can pour boiling water over almonds, soak for 20 minutes, strain and repeat process 3x (total of one hour) if you're in a hurry to make almond milk!
Once soaked, drain and rinse almonds.
Add almonds and fresh filtered water in blender.
Blend on high for 2 minutes or until milk starts to look smooth.
Strain in a nut milk bag (linked above), squeezing as much milk out of the pulp as possible.
Store in an airtight container in the refrigerator for up to 5 days.

Substitutions for this recipe
Nuts- You can make this recipe with any type of nut. Cashews, walnuts, or pecans will all work!
Spices- You can omit the cinnamon or add ginger if you'd like more flavor
Sweetener-You can sweeten almond milk with maple syrup or a date, but it will not be Whole30 if you add maple syrup
Vanilla- You can add in 1/2 a vanilla bean or unsweetened vanilla bean powder to get more vanilla flavor
