sliced almonds

dried cranberries

Zesty Lemon Dressing

olive oil

teaspoon
lemon zest
zest of 1 lemon

lemon juice
juice of 2 lemons

dijon mustard

honey

teaspoon
salt

black pepper

fresh chopped parsley
or 1/4 teaspoon dried parsley
Instructions
In a food processor or small blender mix together olive oil, lemon juice/zest, dijon mustard, honey, salt, pepper and parsley.
Remove kale from stems and chop into 1 inch pieces.
Place the chopped kale in a large mixing bowl.
Toss kale with toppings and dressing in a large bowl until evenly coated.
