This is truly the best kale salad recipe. It’s loaded with ALL the toppings: apples, dried cranberries, goat cheese, avocado.. and then topped with the best fresh lemon dressing (made with fresh lemon juice).

This Simple Kale Salad is filling, delicious and will make you see kale in a whole different way.

Kale is definitely one of those ‘health foods’ that gets an eye roll from most people. It can be bitter, earthy.. and just plain gross if you don’t prepare it the right way.

Kale Lemon Salad Ingredients

Here’s what you need to make kale salad!

  • fresh dinosaur kale
  • toppings: sliced almonds, goats cheese, dried cranberries, green apple, avocado

Ingredients for Fresh Lemon Dressing

  • extra virgin olive oil
  • fresh lemons
  • dijon mustard
  • honey
  • fresh parsley, salt and pepper

A citrus juicer will also be helpful to have!

How to prepare Kale for salad

If you’ve never prepped kale before, it’s so easy to do!

  1. Near the base of the stem, slightly peel the edges of the leafs off the stem. Grip the center of the stem (the rib of the kale).

  1. Pull the kale leaves back so you’re left only with soft kale. You can discard the stem.

You can eat all of the kale, stem included if you’d like but the stem is very tough and usually bitter.

How do you cut kale for salad? One you’ve destemmed your kale, use a sharp knife to cut it into square pieces or thinly slice it – it’s up to you how big you’d like the pieces to be.

How to make Lemon Kale Salad

Making this salad is easy! Here’s how to do it:

  1. Remove kale from stems and chop into 1-inch pieces.

  1. In a food processor or small blender mix together olive oil, lemon juice/zest, dijon mustard, honey, parsley, salt and pepper. Place in a bowl with all other ingredients.

  1. Toss salad in a large bowl until evenly coated.

Substitutions

Olive Oil: You can substitute olive oil with avocado oil.

Dinosaur (Lacinato) Kale: If you are unable to find dino kale, you can substitute curly kale or red Russian kale (maybe tuscan kale). You can also use fresh spinach or romaine lettuce as a substitution.

Craisins: Feel free to use raisins or any other dried fruit of your liking. You can also skip the craisins

Sliced almonds: If you have a nut allergy, sunflower seeds are just as delicious in this salad. Other nuts such as pecans and walnuts work instead of almonds as well.

Goats cheese: Feta cheese is a great alternative to goat’s cheese in this salad.

Dijon Mustard: Using whole-grain or stone-ground mustard instead will do the trick.

Honey: Maple syrup and agave syrup can be used in place of honey in the kale salad dressing.

To Make it Lower Carb: This salad is already relatively healthy. If you want it to be lower carb you can skip the craisins and apples.

To Make it Lower Calorie: Substitute the avocado and goat’s cheese toppings for lower fat and calorie options like fruit.

Ingredients

Kale Salad Ingredients:

  • 1 lb dinosaur kale
  • 2 tablespoons sliced almonds
  • 1/4 cup goat cheese
  • 1/4 cup dried cranberries
  • 1/2 cup sliced apple
  • 1/2 cup chopped avocado

Zesty Lemon Dressing

  • 2 tablespoons olive oil
  • 1 teaspoon lemon zest zest of 1 lemon
  • 2 tablespoons lemon juice juice of 2 lemons
  • 1/2 tablespoon dijon mustard
  • 1/2 tablespoon honey
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 tablespoon fresh chopped parsley or 1/4 teaspoon dried parsley

Instructions

  1. In a food processor or small blender mix together olive oil, lemon juice/zest, dijon mustard, honey, salt, pepper and parsley.
