This Easy Avocado Ranch Salad is better than any salad kit! Toss together this delicious salad in under 5 minutes for a healthy lunch!

This Avocado Ranch Salad is the perfect quick lunch! Loaded with toppings and a creamy avocado ranch dressing – it’s delicious and so easy to make!

This salad has black beans, corn and peppers which give it tons of flavor and texture! It’s perfect served on it’s own or with some bbq grilled chicken.

This salad recipe is one of our favorites! Here’s why:

  • Better than a salad kit – If you’ve ever had an avocado ranch salad kit, I promise this is way better! No preservatives or weird ingredients (but all the same flavors)
  • Easy to make– this salad is made with common kitchen/pantry ingredients
  • Delicious! – We believe that salads don’t have to be boring diet food – this avocado ranch salad is loaded with flavor!

Ingredients for Avocado Ranch Salad

To make this Avocado Ranch Salad you’ll need:

  • romaine & cabbage
  • cheddar cheese
  • bell pepper
  • corn
  • black beans
  • avocado
  • red onion

For the dressing you’ll need:

  • avocado
  • greek yogurt
  • garlic power, onion powder
  • dried dill, dried parsley, dried chives
  • pepper & salt
  • water

How to Make Easy Avocado Salad

This salad is so quick and easy to put together!

  1. In a large bowl toss romaine and cabbage together. Add toppings and dressing, toss until combined.

SUBSTITUTIONS FOR AVOCADO RANCH SALAD

Greens: You can use any type of salad greens. We like the mixture of romaine and cabbage but spinach or spring mix will also work.

Cheddar Cheese: You can use any cheese or omit the cheese. Pepper jack or monterey jack would go well in this salad.

Bell Pepper: You can use any color pepper, or substitute with tomatoes

Corn: Is optional, feel free to omit it.

Black beans: If you don’t have black beans you can use pinto or kidney beans. You can also omit the beans.

Avocado: To make this salad lower in fat, skip the avocado topping. The salad dressing is meant to be made with avocado so we don’t recommend substituting that.

Red Onion: You can skip the red onion.

Greek Yogurt: We haven’t tried this recipe with any other yogurt but I think full fat or non dairy would be fine.

Spices: Feel free to use more or less herbs/spices

How to Store Avocado Ranch Salad

Storing: This salad will last in the refrigerator for up to 4 days in an airtight container. We recommend storing the dressing and salad separately.

Note on separation: Separation may occur in the dressing when stored in the fridge. Use a spoon to stir together or quickly blend again to reconstruct the dressing.

Browning: Avocados do oxidize if they’re exposed to air. This dressing recipe might turn a yellow/brown color as the days pass but it will still be fine to eat. It’s best eaten fresh!

Ingredients

  • 3 cups romaine chopped
  • 2 cups shredded cabbage
  • ¼ cup grated cheddar cheese
  • ¼ cup bell pepper diced
  • ¼ cup corn frozen/thawed or canned/drained
  • ¼ cup black beans rinsed & drained
  • ¼ cup avocado diced
  • ¼ cup red onion finely diced

Avocado Ranch Dressing:

  • 1/2 cup avocado about ½ an avocado
  • 1 tablespoon greek yogurt or nondairy yogurt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon dried dill
  • 1/4 teaspoon dried parsley
  • ¼ teaspoon dried chives optional
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • 1/3 cup water

Instructions

  1. In a large bowl toss romaine and cabbage together.
  2. Add toppings and toss until combined.
  3. Set salad aside. In a food processor or small blender, combine all dressing ingredients until smooth.
  4. Store in the refrigerator for up to 4 days.

  1. Please recommend to use organic down to the spices, otherwise it wont be healthy full of pesticides and heavy metals.

    1. Not everyone can afford all organic down to the spices. Even if you’re not using organic ingredients, this is still a healthy delicious option. You’re privileged to be able to afford all organic everything, but not everyone is 🙂

    just made some for lunch today, tastes very good, creamy and yummy. Took a lot more than 1/3 cup water to make a dressin, more like 3/4. can hardly wait for noon to roll around, just 2 hours to go!!
