Instructions
Stove Top Instructions
In a large pot, heat olive oil. Sauté onions and garlic for about 5 minutes until translucent
Add carrots, celery and potatoes. Saute for an additional 5 minutes.
Add spices, tomatoes, vegetable broth, water and frozen veggies to the pot. Cover and bring to a boil.
Simmer for 20 minutes, stirring occasionally.

Instant Pot Instructions
Set your instant pot to saute. Heat olive oil. Sauté onions and garlic for about 5 minutes until translucent
Add carrots, celery and potatoes. Saute for an additional 5 minutes.
Add spices, tomatoes, vegetable broth, water and frozen veggies to the pot. Cover and set the pot to sealing, 5 minutes Manual Pressure.
Once the pot has finished cooking, let it naturally release pressure for 5 minutes. Quick release the remaining pressure & enjoy!
Crockpot Instructions
In a large pot, heat olive oil. Sauté onions and garlic for about 5 minutes until translucent
Add carrots, celery and potatoes. Saute for an additional 5 minutes.
Add cooked vegetables to the crockpot base.
While vegetables are cooking, drain + rinse beans.
Add spices, tomatoes, vegetable broth, water and frozen veggies to the crockpot. Stir and cook on low for 4-6 hours.
