There aren’t many things that are cozier than a big bowl of vegetable soup on a chilly day and this recipe is loaded with over 10 cups of veggies!

While we love traditional beef vegetable soup or chicken veggie soup, this recipe is vegan and vegetarian friendly and is such a hearty soup you won’t even miss the meat!

We Love This Healthy Vegetable Soup Recipe

There is a lot to love about this easy soup recipe. It’s the perfect healthy dinner, we love it because it is:

  • LOADED with vegetables: This soup is full of delicious veggies that pack this soup with nutrients.
  • Comforting: There is no better way to warm you up than with a big bowl of flavorful soup.
  • Versatile: You can make this soup on the stovetop, in the instant pot, or in the crockpot.

Best Vegetable Soup Ingredients:

To make this soup you’ll need:

  • olive oil
  • onion, garlic, carrots, celery
  • potatoes
  • dried oregano, dried parsley, dried basil, salt, pepper, red pepper flakes
  • canned crushed tomatoes
  • vegetable broth, water
  • frozen corn, frozen green beans
  • frozen peas, zucchini

How To Make Vegetable Soup on the Stovetop:

  1. In a large pot, heat olive oil. Sauté onions and garlic for about 5 minutes until translucent. Add carrots, celery, and potatoes. Saute for an additional 5 minutes.

  1. Add spices, tomatoes, broth, water, and veggies to the pot. Cover and bring to a boil.  Simmer for 20 minutes, stirring occasionally. Enjoy!

Making Vegetable Soup in the Instant Pot:

  1. Set your instant pot to saute. Heat olive oil. Sauté onions and garlic for about 5 minutes until translucent
  2. Add carrots, celery, and potatoes. Saute for an additional 5 minutes.
  3. Add spices, tomatoes, broth, water, and veggies to the pot. Cover and set the pot to sealing, 5 minutes Manual Pressure.
  4. Once the pot has finished cooking, let it naturally release pressure for 5 minutes. Quick release the remaining pressure & enjoy!

How to Make Vegetable Soup in the Crockpot:

  1. In a large pot, heat olive oil. Sauté onions and garlic for about 5 minutes until translucent
  2. Add carrots, celery, and potatoes. Saute for an additional 5 minutes.
  3. Add cooked vegetables to the crockpot base.
  4. While vegetables are cooking, drain + rinse the beans.
  5. Add spices, tomatoes, broth, water, and veggies to the crockpot. Stir and cook on low for 4-6 hours.

VEGETABLE SOUP SUBSTITUTIONS:

Olive Oil: You can substitute avocado oil, butter, or ghee.

Onion/Garlic– You can omit onion/garlic if on a low fodmap diet.

Spices: Feel free to substitute fresh herbs for dried spices. Use double the amount of fresh herbs in place of dry herbs.

Meat: You can add cooked chicken, ground beef or ground turkey to this recipe. I like to get a rotisserie or shredded chicken and add it to the pot! We also have Chicken Vegetable Soup, Vegetable Hamburger Soup, and Beef Vegetable Soup!

Other vegetables: You can add cauliflower rice to this soup if you’d like. Feel free to add more veggies whether frozen or fresh vegetables. You may also love our Creamy Vegetable Soup or this CopyCat Panera 10 Vegetable Soup.

Tomatoes: If you don’t have crushed tomatoes, you can use other canned tomatoes: petite diced tomatoes or tomato sauce. They will both taste great! Regular diced tomatoes may be too large depending on your taste. If you want a little spicier, you could try fire roasted tomatoes.

Broth: Any broth or stock (broth and stock are the same) can be used in any soup recipe. Beef BrothChicken Broth, bone broth, or veggie broth all work interchangeably. I always use low or no salt broth.

Ingredients

  • 2 tablespoons olive oil
  • 1 cup onion minced
  • 1 tablespoons garlic minced – approx 3 garlic cloves
  • 1 cup carrots minced
  • 1 cup celery minced
  • 1 cup potatoes peeled & chopped
  • ½ teaspoon dried oregano
  • ½ teaspoon dried parsley
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon black pepper
  • 1/8 teaspoon red pepper flakes optional
  • 1/4 teaspoon salt optional
  • 28 oz canned crushed tomato
  • 2 cups vegetable broth
  • 2 cups water
  • 1 cup frozen corn
  • 1 cup frozen green beans
  • 1 cup peas
  • 1 cup zucchini cut in squares

Instructions
