Ground Beef Vegetable Soup Ingredients
To make this vegetable ground beef soup you will need:
- olive oil
- ground beef
- garlic, onions
- celery, carrots
- beef broth
- petite diced tomatoes
- bay leaves, dried parsley, dried basil, dried oregano, salt, pepper
- frozen corn, frozen peas, frozen green beans
- elbow macaroni

How To Make Vegetable Soup With Hamburger Meat
- In a pot, brown ground beef in oil over medium high heat for 10 minutes until no longer pink.
- Add onions, garlic, carrots, and celery. Cook for 5 minutes.
- Add broth, tomatoes, spices, and frozen veggies to pot.
- Bring to a boil for 5 minutes. Add raw pasta. Reduce to a low simmer and cook for 10-15 minutes until pasta is cooked.
- Remove bay leaves and enjoy!

Substitutions for Vegetable Hamburger Soup
Olive Oil: You can substitute avocado oil, butter, or ghee.
Onion/Garlic: You can omit onion/garlic if on a low fodmap diet.
Veggies: Feel free to add in more or less veggies to your liking.
Chicken Breasts: You can substitute with boneless chicken thighs or chicken tenders.
Ground Beef: We like 85/15 ground beef. Feel free to use leaner ground beef depending on what you like. To make vegetarian you can use cooked lentils or ground beef substitute. You’ll need to adjust your cooking time. I haven’t tried making this with ground turkey or ground chicken but I think it would work.
Broth: Any broth or stock (broth and stock are the same) can be used in any soup recipe. Beef Broth, Chicken Broth, or vegetable broth all work interchangeably. I always use low or no salt broth.
Tomatoes: If you don’t have petite diced tomatoes, you can use canned crushed tomatoes or even tomato sauce. They will both taste great. Petite diced tomatoes are better simply because they’re cut smaller which is good for soups.
Spices: Feel free to substitute fresh herbs for dried spices. Use double the amount of fresh herbs in place of dry herbs.

How To Serve Vegetable Soup with Ground Beef
This recipe is so filling and comforting on its own! We love enjoying it with a:

Vegetable Hamburger Soup
Ingredients
- 1 tablespoon olive oil
- 1 lb ButcherBox ground beef
- 1 tablespoon garlic minced
- ½ cup onions minced, 1 medium onion
- ½ cup celery minced, 2 celery ribs
- 1 cup carrots cut in small coins
- 4 cups beef broth
- 1 14 oz canned petite diced tomatoes
- 2 bay leaves
- ¼ teaspoon dried parsley
- ¼ teaspoon dried basil
- ¼ teaspoon dried oregano
- ¼ teaspoon salt add more to taste
- ½ teaspoon pepper
- 1 cup frozen corn thawed
- 1 cup frozen peas thawed
- 1 cup frozen green beans thawed
- 1 ½ cups elbow macaroni

- In a soup pot, heat olive oil. Brown ground beef over medium high heat for 10 minutes until no longer pink.
- After 10 minutes, add onions, garlic, carrots and celery. Cook for an additional 5 minutes.
- Add broth, tomatoes, spices and frozen veggies to the pot.
- Bring to a boil for 5 minutes. After the soup has boiled for 5 minutes, add raw pasta. Reduce to a low simmer and cook for 10-15 minutes until pasta is cooked.
- Once cooked, remove bay leaves and enjoy.
Crockpot Instructions:
- In a soup pot, heat olive oil. Brown ground beef over medium high heat for 10 minutes until no longer pink.
- After 10 minutes, add onions, garlic, carrots and celery. Cook for an additional 5 minutes.
- Add sautéed meat and veggies to the crockpot.
- Add broth, tomatoes, spices and frozen veggies to the crock pot base
- Cook on high for 4-6 hours or low for 6-8 hours.
- 20 minutes before you’re ready to eat, cook your pasta per the package directions. Drain and add to the pot.
- Remove bay leaves and enjoy.
Instant Pot Instructions:
- Set your instant pot to sauté for 15 minutes. Add olive oil. Brown ground beef for 10 minutes until no longer pink.
- After 10 minutes, add your onions, garlic, carrots and celery. Sauté for an additional 5 minutes.
- Add broth, tomatoes, spices and frozen veggies to the instant pot.
- Cover and set to sealing, Manual Pressure for 5 minutes. It will take the instant pot about 20 minutes to come to pressure. Once the soup has finished cooking, quick release the pressure.
- 20 minutes before you’re ready to eat, cook your pasta per the package directions. Drain and add to the pot.
- Remove bay leaves and enjoy.
