There are few things I love more than a big bowl of soup. Not only are soups delicious – they’re SO easy to make. They’re perfect for loading up with veggies and protein for a filling meal.
Over the years I’ve found the perfect way to make soup and some tips for storing/serving it. I’ve shared them for you below as well as 30 of our favorite healthy soup recipes!
What makes soup healthy?
Soup is one of the healthiest meals you can make! Here’s why it is so good for you:

You can make all of these soup recipes with your stove and a good pot (or dutch oven).
What soups are good for losing weight? Any soup that is high in protein/veggies and low in fat will likely be good for losing weight. Many of these soup recipes are good for weight loss!
Can you lose weight by just eating soup? You probably can lose weight by eating soup. All of these healthy soup recipes are high in protein and veggies which is great for weight loss. Just eating soup might be a bit boring though, we’re all about eating a mix of foods!
Tips for making healthy soup recipes:
Add more veggies! You can always sneak in more veggies to soups. I like to use my food processor to get the veggies in super small pieces, or add a couple cups of chopped greens at the end of cooking soup.
Use bone broth: Bone broth is an awesome way to amp up the protein and nutrients in your soup recipes
Use a parmesan cheese rind – This is such a simple thing you can do to amplify the flavor of your soup. I grab them at the grocery store. Simply remove them once you’re done cooking and you’re good to go!
Add pasta, zoodles and greens at the end. I rarely cook pasta/zoodles in soup. You’re better off to cook separately and then add to your bowl when you’re serving!
Which soup is healthiest? That depends on who you ask! Personally, I think any soup that is loaded with veggies + protein is healthy. Minestrone, Chicken Soup and Vegetable soup are all great healthy options!
How to store soup:

When you’re ready to eat, defrost the night before by leaving this in the fridge, or take out of the refrigerator and heat over the stove/in the microwave.

Healthy Soup Recipe Slow Cooker Chicken Pot Pie Soup
- 2 tablespoons olive oil
- 1 lb. chicken breasts about 2 larger breasts
- 1 cup celery 1 inch pieces
- 1 cup carrot 1 inch pieces
- 1 cup onion finely chopped
- 1/2 tablespoon garlic finely minced
- 2 cups yukon gold potatoes peeled+ cut into 1 inch pieces
- 1 cup yukon gold potatoes peeled+ cut into quarters so that you can remove them at the end
- 1 teaspoon pepper
- 1/2 teaspoon salt
- 3 cups chicken broth or bone broth- low sodium!
- 3 tablespoons parsley for garnish
- 1/2 cup almond milk or milk/ other dairy free milk
- Heat olive oil in a pan on the stove. Add in the celery, carrot, onion, garlic, salt and pepper. Sauté for 2 minutes or until slightly translucent. (This step is optional, but recommended!)
- Layer raw chicken, cooked vegetables, and potatoes in the crockpot. Add broth. Cover + set to low for 6 hours.
- Once cooked, remove the large potato pieces + chicken breasts.
- Place large potato quarters, almond milk + 1/2 cup of broth *from the pot* (a few ladels full!) into a blender until smooth. Add back into the pot.
- Place chicken breasts on a cutting board and shred. Put the chicken back into the pot.
- Stir everything together until combined and smooth. Garnish with parsley and serve.
