Alphabet soup is a tasty soup with alphabet shaped pasta, veggies, chicken, and a tomato flavored stock that is the ultimate comfort food. A great recipe for kids to get them excited about food, and it tastes amazing too!
Liz & Tyler’s Tips for the Best Alphabet Soup
- This soup is the best way to hide veggies in a delicious broth with the best pasta shape in every spoonful. Add a cup of frozen spinach to this soup and make it even more nutritious! If your kids don’t love the sight of spinach, blend it with a cup of liquid and add it back to the alphabet vegetable soup so you can’t even notice it!
Ingredients:

Olive Oil: You could use avocado oil, but we really recommend extra virgin olive oil.
Vegetables: We love using a base of carrots, onions, celery, and garlic in most of our soups. We have also included green beans, corn, and peas for some added veggies. It’s very easy to substitute some of the vegetables and add more or less of what we have provided. Other great options include cauliflower rice, broccoli stems, kale, spinach, and zucchini.
Chicken Breasts: You can substitute with boneless chicken thighs or chicken tenders, but we like the texture of the chicken breasts the best.
Broth: Any broth or stock (broth and stock are the same) can be used in any soup recipe. Beef Broth, Chicken Broth, or vegetable broth all work interchangeably. I always use low or no salt broth.
Tomatoes: The crushed tomatoes give this sauce a nice texture, but feel free to use tomato sauce or tomato puree as well.
Pasta: The alphabet pasta shape makes this soup. We have not tried this with gluten-free pasta, but there are some options for gluten-free pastas out there.
Cheese: The Parmesan cheese rind is optional if you need a dairy-free recipe.
Spices: Dried rosemary and thyme would be great options if you don’t have any dried parsley, basil, or oregano on hand.
How to Make Alphabet Soup

- In a large pot, heat olive oil over medium high heat. Sauté the carrots, celery, onion, and garlic for about 5 minutes until translucent.

- Stir in all ingredients (except pasta) to the pot, cover, turn the heat to high, and bring to a boil.

- Once boiling, add the pasta to the pot. Cook uncovered for half the recommended cook time on the pasta package. Remove from heat; discard the bay leaves and Parmesan cheese rind.

- Remove the chicken breasts from the pot with a pair of tongs and shred with two forks.

- Add the shredded chicken back into the pot. Stir together and serve hot with Parmesan cheese on top.

Storing: These leftovers will last in the refrigerator for up to 4 days in an airtight container
Freezing: We don’t recommend freezing this soup as the pasta will get mushy when reheating from frozen.
Reheating: You can reheat this recipe in the microwave or on the stove.

Ingredients
- 1 tablespoon extra virgin olive oil
- 1 ½ cups peeled diced carrots
- 1 ½ cups minced celery
- 1 cup minced onion
- 1 tablespoon minced garlic
- 1 ½ pounds boneless skinless chicken breasts
- 1 quart low sodium chicken stock
- 28 ounces crushed tomatoes
- 2 cups water
- 1 cup chopped green beans
- 1 cup corn
- 1 cup peas
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon dried parsley
- ½ teaspoon black pepper
- ¼ teaspoon salt
- ⅛ teaspoon red pepper flakes
- 2 bay leaves
- 1 Parmesan cheese rind optional
- 1 cup dried alphabet pasta
Instructions
- In a large pot, heat olive oil over medium high heat. Sauté the carrots, celery, onion and garlic for about 5 minutes until translucent.
- Add the chicken breasts, chicken stock, tomatoes, water, green beans, corn, peas, basil, oregano, parsley, pepper, salt, red pepper, bay leaves and Parmesan cheese rind to the pot. Stir together, cover the pot and turn the heat to high to bring to a boil. It will take about 10 minutes to come to a boil.
- Once the soup is boiling, add the pasta to the pot. Cook uncovered for half the recommended cook time on the pasta package. Do NOT overcook the pasta, because it will continue to cook as the soup cools.
- Once the pasta has cooked, remove the soup from the heat.
- Discard the bay leaves and Parmesan cheese rind.
- Remove the chicken breasts from the pot with a pair of tongs and shred with two forks. You can also use a stand mixer with the paddle attachment to shred, or you can cut the chicken on a cutting board.
- Add the shredded chicken back into the pot. Stir together and serve hot with Parmesan cheese on top.
