I’ve got a confession to make. I’ve fallen in love with beets.
This is a recent love affair.. maybe it was all the Valentine’s Day cards, candy, and gifts that sparked it… I’m not sure.
Last week, my friends at Love Beets sent me a huge variety of their products to try.
In addition to making some of the best beets I’ve ever tasted, they also make beet juice, and beet bars! All of which don’t have any preservatives and are gluten free.
Their baby beets are my new favorite add in to all of my salads, soups, snacks.. and pretty much anything else! The beets are harvested early for a sweeter taste, and then steam cooked until they are tender in the marinades. The marinades are what give the beets their unique flavor.. from Organic Honey & Ginger to Sweet Fire, the flavors are amazing!
What really caught my eye were their new Smoky BBQ Shredded Beets
I knew the second I saw them that I wanted to make some sort of dip or spread. I decided hummus would be the best way to go. So I threw some ingredients in my food processor….
Blended it up…
And… wah-lah. The best hummus you’ll ever taste.
- ¾ c Smoky BBQ Shredded Love Beets
- 15 oz chickpeas
- 2 tablespoons tahini
- 2 garlic cloves
- ½ c Extra Virgin Olive Oil
- ½ c Water
- 2 drops Lime Essential Oil
- 1 tsp paprika
- ½ tsp salt and pepper
- Ready for the easiest instructions ever?
- Put all the ingredients above in a food processor and blend it all together. Yep. That's it.
- Then just try to keep yourself from eating it all. Which is REALLY tough to do.
