These Homemade RX Bars are without a doubt going to be your new favorite snack. They’re SO darn easy to make, are packed with protein, and loaded with Vital Protein’s Amazing Mixed Berry Collagen (which I swear make my hair and nails grow like weeds!)

What are RX Bars?
RXBar’s are a super popular, all-natural protein bar.
They have super clean ingredients, taste amazing, and are a great option to have on the go. All of the flavors are amazing, but the Mixed Berry ones are without a doubt my favorite. They seriously taste like you’re eating a berry muffin!
Now, let me just clarify and say that I love RX Bars. I think they have an amazing product, and they’re pretty much the only protein bar that I’ll eat.

Even though I love RX Bars, they can be a little pricey. Since they’re made with such minimal ingredients, I knew I could make a cheaper version at home!

How to make Homemade RX Bars:
All you really need are some nuts, dates, collagen (or egg white protein powder). When you buy these in bulk like I do, they are super cheap – and are perfect for making a DIY version of this protein bar that everyone loves!
Toss your ingredients in a blender, roll out, slice + enjoy! (It’s as simple as that!)

The best part about these bars (and why I think they’re better than the regular ones) is that they have a ton of collagen in them. Vital Protein’s Collagen has been integral in helping my hair, skin, nails and digestion.
I see a noticeable difference when I use it daily versus when I don’t. My nails and hair grow basically like weeds (seriously, it’s crazy!) My skin is clearer and brighter, and my gut feels like it’s in check!
While everyone’s results in taking collagen will be different, I personally love it and think these Copy Cat Mixed Berry RX Bars are the perfect way to get it into your diet!

Homemade RX Bars
Ingredients
- 1/2 cup freeze dried strawberries
- 1 cup raw almonds
- 1/2 cup raw cashews
- 1.5 cup dates
- 1/3 cup Vital Proteins Mixed Berry Collagen
- 1 tablespoon coconut oil melted (optional – see directions)
Instructions
- In a food processor, pulse strawberries until they are a powder like consistency.
- Add in almonds, cashews, dates, and Vital Proteins Mixed Berry Collagen. Process until thoroughly combined, and a sticky binded consistency, approximately 1 minute.
- You may need to add melted coconut oil to help your food processor along, but it is not necessary
- Place the batter in between two sheets of parchment paper and roll with a rolling pin until ¼ inch thick.
- Slice into bar shapes + enjoy!
- Store in an airtight container in the refrigerator for up to a week

Hi Carolyn – You can’t substitute raw eggs for egg white powder. These bars aren’t baked, so you need the powder.

I tried your recipe for these DYI Rx Bars and they turned out great! I didn’t have the powder you suggested but I did use my dried strawberries and blueberries. The fruit flavor really stands out. Going to be fun substituting ingredients. Thank you for sharing the recipe. It’s a keeper.

If using egg whatever powder rather than berry flavored collagen, are there additional ingredients to add to the egg white powder to achieve the same results as the presence of berries in the collagen?

So, I’m not sure if I’m the only one to do this, but I used Deglet Noor Dates, and even though the flavor is still there, I just could not get them to hold together. Also, I put almost double the dates in, and it is still very crumbly. Only suggestion is to maybe let people know that medjool dates are KEY here. Or, perhaps there is another additive to help bind the mix, if you can only use/get the Deglet Dates…..? I know the links take you to Medjool dates, however, I saw the Deglet ones at Costco for a reasonable price and did not know there was a difference. I did locate some Medjool dates at a local Aldi’s for $4.99/lb, So I will be remaking the recipe.

Hi Aaron – I’m not sure what could’ve gone wrong here. I’ve never heard of deglet noor dates, but I just looked them up and it says that they are much firmer than medjool dates so I’m wondering if that was the cause of the issue here. Medjool dates are very sticky.. almost like a jam texture, while it seems the deglet noor ar drier like dried fruit. Without trying it I can’t be sure but I think that is probably the issue!

Thanks for responding, I believe that is definitely the issue. My small amount of research shows the medjool are larger and stickier than the Deglet. I believe that stickiness is what is key in getting the mix to bind together. I will be using your recipe in the future. Just wanted to let people know Medjool are key, don’t make my mistake, haha.
