Pesto Chicken Salad is easy to make with only 5 ingredients. High protein and delicious, it’s also low calorie and great for meal prep!

Pesto Chicken Salad is a quick, easy lunch that we make all the time! Packed with protein, gluten free, and low in fat – you’d never know it has no mayo!

We use nonfat Greek yogurt, pesto and olive oil to give the chicken salad the perfect texture and flavor.

It’s great for meal prepping because it takes only 10 minutes to make. Serve it on a salad or in a sandwich!

Liz Tips for the Best Pesto Chicken Salad

  • Use a rotisserie chicken to save time – we like to buy a rotisserie chicken, pull all the meat off it, chop it up and use that for the base of the recipe. Save the bones for Chicken Bone Broth!

This is our favorite pesto to use in this recipe!

Olive Oil: You could use avocado oil, but we really recommend extra virgin olive oil. If you want to omit the olive oil, you can, but the chicken salad will be a little dry.

Chicken Breasts: You can substitute cooked chicken breasts with any cooked chicken. Thighs or legs may result in a greasier chicken salad. We like to make this recipe with cooked chopped chicken from a rotisserie chicken.

Pesto: Any pesto will work in this recipe, but this pesto is our favorite!

What to Serve with Pesto Chicken salad

This chicken salad is great on a sandwich! We like to toast sourdough bread, add a thin spread of pesto, and serve it in a sandwich.

This is also great served on top of a salad. It goes well with our Italian Chopped Salad or our Blueberry Salad.

Storing: This will last in the refrigerator for up to 4 days in an airtight container.

Freezing: You can’t freeze chicken salad. It will get watery.

Serves : 4 ¾ cup

Ingredients

  • 2 ½ cups chopped cooked, shredded chicken about 1 lb
  • ½ cup plain nonfat greek yogurt
  • 3 tablespoons pesto
  • 1 tablespoon extra virgin olive oil
  • 1 cup finely diced celery

Instructions

  1. Chop the celery.
  2. Add the chopped chicken, Greek yogurt, pesto, olive oil and celery to a large mixing bowl.
  3. Stir together using a spatula until all the ingredients are thoroughly mixed.
  4. Serve on a sandwich or over a salad.
