It is OFFICIALLY summer! To say that I’m excited about it would pretty much be the biggest understatement of 2017. I have been waiting for summer to start to kick off our Healthy Summer Sips Series, and I’m so excited the time has finally come! For those of you wondering what the heck is she talking about? Let me explain.
This summer, every other week (or possibly every week depending on your feedback!) we will be posting a light, fresh summer cocktail! Over the years, I’ve found it difficult to find healthy cocktail recipes that suit my lifestyle. So many drinks are loaded with sugar and odd add-ins. Even though alcohol in itself isn’t ‘healthy’, it’s unrealistic to think that everyone is going to give up cocktails during the summer just because they’re trying to eat better. While I personally don’t drink very much, I like to indulge from time to time, and when I do I’d prefer not to go into sugar overload (which not only leaves you feeling gross after drinking, but consequently gives you a horrible hangover).
I knew I wanted to kick off the series officially with my all time favorite drink – a mojito. Mint is one of my favorite things to add to drinks. It’s beyond refreshing, and tastes so yummy when mixed with fruit and citrus juice. Usually during the week I make a big pitcher of infused water with mint, berries + lime juice – but come Friday, I jazz it up and add a little kick to it!

I’m not exactly sure when mojitos became my ‘signature drink’. It was probably sometime after I started eating relatively healthier, and realizing that now that I was 21 it was time to retire my old favorite of Malibu and orange juice for something slightly more grown up. Either way, after trying them – they quickly because my favorite happy hour go-to! Mojitos are relatively healthy on their own, but for this recipe I swapped out the refined sugar in the simple syrup for honey + strawberries!
- 2 tablespoons honey
- ½ cup strawberries, chopped into small pieces
- Juice of 1½ limes
- 15-20 large fresh mint leaves
- 2 cups club soda
- 2 oz white rum
- Ice, extra mint & lime for garnish (optional)
- In a microwave safe measuring cup, mix 2 tablespoons honey with 2 tablespoons of water to create a simple syrup.
- Add in chopped strawberries, lime juice + mint and muddle until combined (you may need to add some of your club soda to help it mix).
- Stir in club soda + rum.
- Add to glasses + serve with ice

I don’t know about you guys, but I’m so ready to kick back and enjoy the weekend with one of these in my hands. We’re going to be tailgating at a concert this weekend and I think I might make a big pitcher full of these to bring with us.
