Healthy Crock Pot Chicken Chili is a simple meal made in a few hours. Loaded with vegetables, spices & shredded chicken, it’s the perfect fall dinner!
It’s officially time for all the soups, stews and chili my friends. And lemme’ tell ya – this Healthy Crock Pot Chicken Chili will not disappoint. I like to think of myself as a bit of a soup connoisseur. As a kid I made it my life mission to try every single diner Chicken Rice Soup within a 100 mile radius of my home. (That’s of course when I was taking time off from my other dietary staple – pastina with butter). When I grew older, I became a little more leery of the diner food, BUT I still continued to love soup. There’s something so comforting about curling up under a blanket with a giant bowl of warm, delicious goodness. Right?
Once I got learned more about nutrition, I realized how healthy you could make soup. I learned all about the benefits of bone broth, and found that you can pretty much load up on ALL the veggies in whatever soup you’re making. It’s the perfect yummy vessel to get in all your nutrients. The second the weather get’s cold, I’m all for breaking out the big pots + making the warm dishes… but you guys probs already know that seeing that I posted this Paleo Turkey Chili back in September when it was still about 80 degrees out (Sorry, not sorry…)
Anyways… a few Sundays ago I was being SO lazy. I didn’t want to meal prep, I didn’t feel like moving off the couch… I just wanted to be a couch potato. But there was the Monday lunch debacle looming over my head. I try really hard to always bring my own lunch in an effort to save money and make healthier choices. Could I go to Chipotle… or Whole Foods… yes, obviously. (And believe me that Chipotle guac was tempting)
Even though I really wanted to take the easy road out, I acted like a responsible adult, got my butt off the couch and stopped binge watching the Sopranos, and compromised with myself by throwing some things in the crockpot. (PS I know we’re like 10 years too late to the party but have you watched the Sopranos? It’s such a good show!)
We had a ton of chicken and veggies, and I had just stocked up on canned tomatoes at Costco… so chili it was! I’ve made chicken chili before, but there was something about this veggie combo that I used that made it the perfect balance of spicy and sweet. I think you guys are gonna love it!
Healthy Crock Pot Chicken Chili

- 1 cup tomato sauce
- 4 large boneless skinless chicken breasts
- 1 small onion, chopped
- 1/2 cup celery chopped
- 1 1/2 cups carrots chopped
- 1 cup chopped peppers
- 28 oz can crushed tomatoes
- 1/4 cup chicken stock
- 1 tablespoon paprika
- 1 teaspoon pepper
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon hot pepper flakes
- 1 cups frozen corn
- Layer cup of tomato sauce in the bottom of crock pot
- Layer uncooked chicken breasts on top of tomato sauce.
- Add chopped vegetables, crushed tomatoes, spices and chicken stock on top of chicken.
- Cook on high for 4-5 hours.
- Shred chicken until in small pieces, and stir together with the chili.
- Add in frozen corn.
- Stir until mixed in + chicken is coated in the chili.
- Serve over quinoa, brown rice, or sweet potato rice
Similar to my Paleo Turkey Chili, this chili is also technically paleo if you serve over sweet potato rice or noodles. It’s also Whole30 approved, gluten free and if you’re vegan you could skip the chicken + add in 3 cups of you’re favorite beans. So basically… EVERYONE can eat this. In addition to being friendly towards all types of diets.. it’s made right in the crockpot. Which means after you throw it all in there, you can just turn it on and forget it (And go back to being a couch potato!) 🙂
