It’s no secret that I love peanut butter. It’s just delicious. On toast, in oatmeal, with chocolate, with a spoon straight from the jar… I’ll take it anyway I can get my hands on it. There are a lot of peanut butter brands that I really love, but one of my favorites has always been Peanut Butter & Co. You’ve heard me talk about them before.. I reviewed a few of their flavors in our Nut Butter Round Up and fell in love with/gave away their Pumpkin Spice Peanut Butter last month on our Instagram.
Naturally when my friends at Sweat Pink gave me the chance to try Peanut Butter & Co’s newest product – Mighty Nut, I jumped at the opportunity! Mighty Nut is Peanut Butter & Co’s powdered peanut butter! Each batch of Mighty Nut is created from quality USA grown peanuts. The peanuts are roasted, then pressed, to remove most of the fat.
Mighty Nut comes in 4 different flavors. Original, Chocolate, Flax & Chia, and Vanilla. I chose to try the Original and Flax & Chia flavors.
I’ve already thought of a million different ways that I’m going to be using the powdered peanut butter… In my smoothies, in my savory recipes, in all of my baked goods.. the list goes on and on. With it being fall, I’m seeing all things pumpkin pop up. I figured why not combine pumpkin and peanut butter?! And so these bites were born. Perfect timing because Peanut Butter & Co has deemed October #Oatober! 🙂
With only 9 ingredients – they’re so simple to make!
Pop them into the freezer for a few minutes.. and ta-da! Snack time!
- Peanut Butter Pumpkin Chocolate Chip Bites
- ¾ c oats
- ½ c Mighty Nut Original Powdered Peanut Butter
- ½ c pumpkin puree
- 2 tbsp honey
- 2 tbsp Peanut Butter & Co Cinnamon Raisin Swirl
- 1 tsp cinnamon
- ½ tsp ginger
- ½ tsp pumpkin pie spice
- ¼ c Enjoy Life Foods Mini Chocolate Chips
- Mix all ingredients together, roll into balls, store in the refrigerator in an air tight container.
