This Shaved Brussels Sprout Salad Recipe is a delicious healthy side dish. A warm brussels sprouts salad that goes with any meal!

There is no better side dish than this Shaved Brussels Sprouts Salad! It’s packed with all the veggies, nuts, seeds, and the best olive oil/vinegar mix for maximum flavor!

I love this salad as a quick side dish with dinner, (it goes great with Crockpot Whole Chicken !), is perfect for the holidays, and even is great for meal prep.

(You can even eat it raw if you want to !)

Why we love this Shaved Brussel Sprout salad:

  • It’s SO easy to make. Like, ridiculously easy and simple. (15 minutes if you buy the shredded brussels sprouts already and 5 minutes if you choose to eat it raw!)
  • It’s packed with ALL the veggies. I often find it difficult to get my veggie intake in, but I could easily eat the whole pan of these!

The base of the salad is obviously shaved Brussels sprouts (buy them pre-shredded!), and then I filled it with all of my favorite nuts/seeds.

Brussel Sprout Salad Recipe Ingredients

To make this shaved brussels sprouts salad you’ll need:

  • shaved brussels sprouts
  • olive oil
  • almonds, walnuts, or pecans
  • dried cranberries
  • rosemary
  • salt, pepper, garlic powder
  • mustard

How to make Shaved Brussel Sprout Salad

  1. Saute shaved Brussels sprouts in olive oil then stir in dried cranberries, spices, and mustard. Stir to combine.

  1. Toss in the almonds.

  1. Sauté for a few more minutes + ta-da! Perfect Shaved Brussels Sprouts Salad.

Best way to shred Brussel Sprouts

You can purchase pre-shredded brussels sprouts which is what we recommend. Otherwise, cut brussels sprouts in half, lay flat, and thinly slice from the top working towards the bottom base of the sprouts (which you can discard).

Brussels Sprouts Salad Substitutions

Nut free: Omit nuts. You can also sub with sunflower seeds if you’d like.

Dried Fruit: You can sub dried cranberries with dried cherries, raisins, or any other tried fruit

Time Saving: You can buy shaved brussels sprouts to save time, I usually find them at Trader Joes

Cheese: You could add goat cheese or shaved parmesan if you’re not paleo or whole30

To make lower calorie: Omit pecans. Spray olive oil instead of pouring it into the pan.

Can you eat raw brussel sprouts in a salad?

Yes, you can! I sometimes prefer to eat it raw! When I eat it raw I usually add extra spinach + chicken to make it a full meal! It’s totally delicious either way 🙂

Where do you find naturally sweetened cranberries?

It is difficult to find dried cranberries that aren’t loaded with sugar. We love these dried cranberries.

If you can’t find ones that aren’t naturally sweetened, just sub with all natural raisins or any other dried fruit that has no added sugar!

Brussel Sprout Salad Storage

How long is Shaved Brussel Sprout Salad good for? Leftovers will last in the fridge for 3-4 days. Brussel sprouts can get soggy, so these are best served fresh!

Can this be frozen? I wouldn’t recommend freezing these after they have been cooked. They will get soggy.

Can Brussel Sprouts Salad be Reheated? Yes, in the oven, in a skillet, or in the microwave. The microwave is easiest but will make them a little bit soggy, so you may want to reheat in the oven/ toaster oven or in a skillet until warm.

Yes, you can shave brussels sprouts ahead of time. They will last 2-4 days in the refrigerator. You can store raw shaved brussels sprouts with a paper towel to preserve freshness.

Do you wash brussel sprouts before or after you cut them?

You should wash your brussels sprouts before cutting them. Brussels sprouts can be very dirty, and if you cut them before they’re washed you can push any bacteria from the outside of the sprout to the inside of it.

This Shaved Brussels Sprout Salad Recipe is a delicious healthy side dish. A warm brussels sprouts salad that goes with any meal!

Ingredients

  • 1 tablespoon olive oil
  • 6 cups shaved brussels sprouts (1.5 lbs)
  • 1/2 cup naturally sweetened dried cranberries
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon fresh rosemary chopped
  • 1 tablespoon dijon mustard
  • 1/2 teaspoon garlic powder
  • 3/4 cup shaved almonds

Instructions

  1. Heat olive oil in a large pan.
  2. Add in shaved brussels sprouts and sauté until they start to get tender (About 5 minutes)
  3. Stir in dried cranberries, salt, pepper, rosemary, garlic powder and mustard. Stir to combine. Toss the shaved almonds in just before serving.

    All I have are frozen whole brussel sprouts, could I still use these in the recipe or will it be too mushy?

    Where did your original recipe go? It used to have balsamic vinegar and hemp seeds? Do you still have that version somewhere? My kids loved that version.

Question: I’m seeing people mention balsamic vinegar and hemp seeds as part of the recipe in their reviews, but the recipe I see above only calls for olive oil, brussels sprouts, dried cranberries, salt & pepper, fresh rosemary, dijon mustard, garlic powder, and shaved almonds. Am I missing an update somewhere? I’m excited to make this for Thanksgiving and just want to be sure I’ve got everything together! Thanks 🙂

    I made this last night and it was delicious! I didn’t buy the Brussel sprouts already shaved because my local grocery store didn’t have them and I didn’t want to drive so far to get them. I just put them in my food processor for a short time and it worked out great. This recipe is so easy and delicious. I made no substitutions or changes. Will definitely be one of my regular recipes!

    Very good recipe that we will keep for a staple. Second time we made it threw in some bacon and reminded us of a salad you’d get at the deli (similar to broccoli salad) but warm and much more healthy and less expensive. This is also really good as leftovers either cold or heated up. We used a bit more balsamic because we love it! Thank you for sharing a great whole 30 option!

    This was a perfect way to jazz up the typical way we make sprouts (always roast). Loved that it was warm and had so much flavor and texture! I will defiantly keep this in regular rotation. Thank you!

      The carbs in this are high because all of the ingredients have carbs in them. Brussels sprouts have 8g of carbs per cup and there’s 6 cups in this recipe. Just on veggies alone that its 48g of carbs. Dried fruit, nuts and seeds also have carbs.

    Perfect salad. Kind of like eating coleslaw, because it has some crunch. A million times more delicious than coleslaw though! Had some leftover, and it’s tasting the same as when I first made it (other than it being colder.) Makes me think that I can make it to bring to a party and not worry about it getting soggy? Thank you!

      Thank you!! I’m so glad you like it! If you’re serving it warm at a party I would probably cook it for 1-2 minutes less. If you’re serving it cold and not cooking it, you can wait and add the dressing/balsamic right before you serve it!

    WHY HAVE I NEVER THOUGHT TO WARM BRUSSEL SPROUTS UP FOR A SALAD?

    So yummy. I make this with both raw and cooked Brussels and it is DEVINE!

    This was really good. I had to make a couple of adjustments based on what I had in my pantry. I used toasted almonds and raisins instead. I didn’t have hemp seeds and honestly don’t know where to even find this (I live in a small town….guaranteed not one grocery store carries it), so I used toasted chia seeds instead. I topped with feta. My only feedback is the stovetop cooking time was totally off for me (potentially due to altitude??). Had I kept it on as long as suggested, they would have been almost mush. I had it total on the stove maybe 5 minutes and that was perfect. I will make this again!

      I have to say after having cold raw Brussels sprout salads, cooking the brussels made it disappointing. Should have stuck with what I knew we liked. I think this same salad left raw would be amazing. I also do not have access to hemp seeds so I substituted with chia seed and flax seeds. All good ingredients and maybe some prefer it cooked but for us it was a let down.

  14. The link that I clicked on that brought me to this recipe shows a picture of shaved brussel sprouts with sliced radishes, pomegranate seeds and Farro. It’s titled, Shaved Brussel Sprouts with Farro Salad. Clearly that is not the recipe mentioned above. Any idea where I can find that recipe?
