Slow Cooker Pulled Pork Tacos are a simple and delicious meal. Prepared in the crockpot in under 10 minutes of prep time!

This delicious slow cooker pulled pork taco recipe is one of our favorite ways to make shredded pork tacos with little to no cleanup!
Pork tenderloin is a lean cut of pork that has much less fat per serving than a pork butt and takes less time to cook.
Pan searing the pork tenderloin before slow cooking adds flavor to the meat. Once you top it with fresh lime juice, homemade taco seasoning, and your favorite salsa, it’s time to set it and forget it in the slow cooker.

Tyler’s Tips for the Best Pulled Pork Tacos
- Pan searing this pork tenderloin before slow cooking it allows for time to develop flavor from browning the exterior of the meat.
- Letting the meat rest for an hour after cooking it gives the pork tenderloin an opportunity to reabsorb some of the juices making for a juicy flavorful piece of meat.
Ingredients:

Olive Oil: You could use avocado oil, but we recommend extra virgin olive oil.
Pork Tenderloin: You can substitute with pork shoulder roast, pork chops, chuck roast, chicken breast (similar to our crockpot chicken tacos), or chicken thighs.
Broth: Any broth or stock (broth and stock are the same) can be used in any soup recipe. Beef Broth, Chicken Broth, or vegetable broth all work interchangeably. I always use low or no salt broth.
Taco Seasoning: Making a simple homemade taco seasoning is easy and delicious with some simple spices. If you want to use a premade taco seasoning from the store, any kind will work well!
Salsa: Red Salsa is our favorite type of salsa to use for this recipe, but a green salsa will be a great option too!
Lime Juice: Using fresh lime juice is ideal, but premade jarred lime juice would work well too. Lemon juice or orange juice can be used in place of lime juice.
How to Make Slow Cooker Pulled Pork Tacos

- Season pork tenderloin pieces with 1 tbsp of taco seasoning and sear in oil for 3 minutes on each side. Place into crockpot insert.

- Cover the pork with the remaining taco seasoning, salsa, lime juice, and chicken broth, cover with a lid, and cook on low for 4 hours.

- Let the pork rest for an hour to reabsorb juices, then shred with two forks or in a stand mixer.

- Return the pulled pork to the crockpot insert to soak up the juices, then serve!
What to Serve with Pulled Pork Tacos
We love serving these pulled pork tacos with whole wheat tortillas, this healthy coleslaw recipe, and cheddar or cotija cheese. Pineapple would also give these a sweet flavor.
You can also serve them in bowls with cooked rice (like our cilantro lime rice), salsa, beans, or with a little bit of guacamole or sour cream. The pork really would go well as the protein in any of your favorite mexican dishes (burritos, enchiladas, quesadillas, etc).
We also love these quick marinated vegetables to go on the side as well.

Storing: This will last in the fridge for up to 4 days in an airtight container
Freezer: You can freeze this recipe for up to 3 months. We like these containers for freezing.
Reheating: You can reheat this recipe in the microwave, toaster oven, oven or on the stove.


Slow Cooker Pulled Pork Tacos
Ingredients
For the Pork
- 1 tablespoon extra virgin olive oil
- 2 lbs pork tenderloin cut into 3 inch long chunks
- 2 tablespoons taco seasoning divided
- 1 cup salsa red or green, we prefer red
- 2 tablespoons lime juice
- ½ cup low sodium chicken broth
Recommended For Serving:
- 8 whole wheat tortillas
- 3 cups healthy coleslaw
- ½ cup cotija cheese
- 1 avocado cubed
Instructions
- In a large sauté pan or stovetop safe crock-pot base, heat 1 tablespoon of olive oil over medium-high heat.
- Prepare the pork tenderloin by trimming any excess fat and silver skin and cut each tenderloin into 3 inch pieces.
- Season the pork tenderloin with 1 tablespoon of taco seasoning on all sides. Sear for 3 minutes on each side or until a nice golden brown crust begins to form. This will help build flavor for the pulled pork and begin to render down some of the fat.
- Once seared, place the pork tenderloin into the crockpot insert.
- Cover the pork tenderloin in the remaining 1 tablespoon of taco seasoning. Pour the salsa and lime juice on top of the pork.
- Add chicken broth to the crockpot insert, cover and cook on low for 4 hours.
- Once cooked, turn the crockpot off and let the pork rest for 1 hour. This will give the meat time to rest and reabsorb some of the juices, making for a tender piece of meat that will be easy to shred and flavorful.
- Remove the pork tenderloin from the crockpot. You can use a pair of gloves and shred the pork or shred with 2 forks on a cutting board. You can also use a stand mixer or hand mixer in a bowl to easily shred the meat (don’t use a hand mixer directly in your crockpot as it can chip the enamel).
- Return the pulled pork to the crockpot insert to soak up the juices.
- Serve with tortillas, rice bowl, salad and finish with your favorite taco toppings. Serve and enjoy!







I saw this recipe had no rating and I have no clue how it doesn’t! If you are looking for a quick and delicious meal, these a pork tacos are IT. I used green salsa and a little more taco seasoning than the recipe called for. I will be making this recipe a regular in my meal prep line up.
