This Corn Salsa is the perfect recipe for a Cinco De Mayo party, Taco Tuesday night, or just when you want a delicious snack with a little kick of spice.
Is there anything better than a big bowl of chips and salsa? In my opinion… no.

Liz’s tips for easy corn salsa
- Adjust the spice to your liking! This recipe is highly customizable and adaptable to individual preferences: use more or less jalapeno, different colored onions, cilantro or not, and lemon juice instead of lime.
- Chop the onion and jalapeno small! This will give the best distribution in the salsa and will make sure you don’t get a mouthful of spice or onion.

Substitutions and additions
Corn: If you aren’t a fan of corn, this recipe would be just as delicious with beans. We also love our Healthy Bean Dip or White Bean Hummus. We recommend using fresh sweet corn or frozen corn, not canned corn.
Olive Oil: We love the mild flavor that olive oil provides in a salsa like this. You may be able to substitute avocado oil.
Red Onion: White or yellow onions would work well in this recipe.
Jalapeños: Cayenne, serrano, and paprika give this salsa a kick. Make sure to seed your jalapeno so it’s not too spicy!
Lime Juice: Lemon juice would work in place of lime juice.
Cilantro: Parsley is a great fresh cilantro substitute.
Additions: Tomatoes, beans, avocados, and/or spices would be delicious in this salsa recipe. You may also like our Avocado Corn Tomato Salad.
How to make Corn Salsa

- In a bowl combine all ingredients.

- Toss until fully coated. ENJOY!
How to serve Sweet Corn Salsa
This salsa is BEST served with warm tortilla chips. It’s also a great topping on our Stuffed Taco Bell Peppers, Keto Bell Pepper Nachos, Taco Casserole, or our Taco Cauliflower Rice Bowls.

How to store
Storing: This will last in the refrigerator for up to 4-5 days in an airtight container.
Freezing: This recipe is best served fresh. We do not recommend freezing corn salsa.

Ingredients
- 2 tablespoons olive oil
- 2 cups corn fresh or frozen, not canned
- ½ cup red onion minced finely
- 2 tablespoons minced deseeded jalapenos (1 jalapeno)

- 1 tablespoon cilantro minced
- ¼ teaspoon salt
- ¼ teaspoon black pepper
