ingredients
To make homemade granola you’ll need:
- rolled oats – I like old fashioned oats for granola. Steel cut oats are too hard for granola, and quick cook oats are too small!
- unsweetened coconut – sweetened coconut usually has high fructose corn syrup which we avoid
- sunflower seeds, pepitas, pecans – nuts are great for crunch and healthy fat
- vanilla powder – you can easily get this online or in the baking isle
- salt
- maple syrup
- coconut oil
- vanilla extract
Substitutions
Can I use quick oats instead of rolled oats for granola? : Don’t substitute with steel cut oats, it won’t work! We haven’t tried quick cook oats, but I think they might work!
Coconut Oil: We haven’t tried this recipe with other oils, but I think extra virgin olive oil or avocado oil will work well.
Shredded Coconut: You can use sweetened or unsweetened coconut, but we prefer unsweetened coconut!
Sunflower Seeds & Pumpkin Seeds: Can be used interchangeably. Feel free to substitute them for one another.
Pecans: You can substitute pecans for walnuts or cashews. You can omit the nuts if you are nut free.
Vanilla Powder: This is optional, but adds a ton of flavor! You can substitute with cinnamon.
Maple Syrup: You can substitute maple syrup with honey or agave.
Add ins: You can add in chia seeds or flax seeds. dried fruit would also be a yummy mix in!
Gluten Free: Make sure to use certified gluten free oats!
How to make Gluten Free Granola
- Combine rolled oats, coconut, sunflower seeds, pepitas, chopped pecans, salt, and vanilla powder.
- In another bowl, combine the maple syrup, oil, and vanilla.Â
- Pour the maple syrup mixture over the oat mixture. Stir to combine all of the ingredients together fully.
- Add the granola mixture to a parchment lined baking sheet, spreading it in an even layer.
- Bake at 300° for a total of 20 minutes stirring the mixture after 10 minutes.

We love this granola! Another batch is in the oven now. We substitute pecans and walnuts if we don’t have or feel like the pepitas or sunflower seeds. It is very adaptable and forgiving. We do put the parchment paper on the pan because it soaks up some of the coconut oil. Make this you will not be sorry!

Used pumpkin seeds, almonds and cashews instead of pecans, and cinnamon. Had to bake another 5 min. Turned oven off and let it sit an additional 5 min. Came out great.
