Since Sunday was the first day of Spring, we were expecting to wake up to beautiful sunny skies, warm weather, and flowers sprouting from the ground.
We 100% did NOT get that. It was around 35 degrees all weekend, and not exactly sunny or spring like. Then, this morning we woke up to 3 inches of snow. Crazy New England weather…
Anyways.. I’m not complaining that it isn’t Spring just yet… the cold weather forced me to stay in the kitchen all day Saturday and come up with 4 awesome recipes to share here 🙂
I’m sharing my favorite one out of the 4 below.
It’s a recipe that I make almost every single week, but I’ve never shared it here. If you follow us on Instagram you know that we both love our oats. I used to cook them on the stove every morning, but cleaning up dirty dishes at 5AM pre-workout is no fun, so I switched to overnight oats. Overnight oats are good in a pinch, but they just doing have that yummy flavor that you get when you cook the oats in a pan. Oat enthusiasts – do ya feel me?
I’ve come up with the solution to the oat problem: baked oatmeal.
You only cook it once… so there is only 1 time clean up. You cut it in squares… so it’s portable. You put it in the microwave before eating… so it tastes like they just came off the stove. Oh and it only has 9 ingredients and takes a half hour to make. SCORE.

Blueberry Oatmeal Breakfast Bake

- 2 cups of old fashioned oatmeal
- 1 c blueberries
- 1 egg
- 3 tablespoons honey
- 1 1/2 cups milk of choice
- 1 tsp cinnamon
- 1/2 tsp ginger
- 1/4 tsp nutmeg
- 1/4 tsp ground cloves
- Preheat oven to 350 degrees.
- Stir all ingredients together in a large mixing bowl.
- Pour into a greased 8 x 8 pan (or cute square ramekins).
- Bake for 30-40 minutes, until top is golden brown and milk appears to be absorbed.
- Enjoy warm or cold!
- Store in an airtight container in the refrigerator for 5-7 days.
