This recipe is a total game-changer, whether you’re meal prepping for the week ahead or just looking for a healthy addition to your balanced dinner.

This is the best recipe for boneless chicken thighs; just marinate in oil and spices, then cook! So simple!

tyler’s tips for Grilled chicken thighs

  • Take your chicken out of the fridge at LEAST an hour before cooking to let to get to room temperature. 
  • Preheat your grill at medium heat for 10-15 minutes -the longer the better to get the grill grates at the right temperature so your chicken won’t stick.
  • Using a digital meat thermometer is the best way to ensure the center of your food is cooked to minimum poultry standard of 165 degrees.
  • Let your chicken rest and finish cooking for another 5-7 minutes before cutting.

substitutions

Chicken Breasts: We haven’t tried this recipe with boneless chicken breasts or chicken tenders, but I think it would work great. You might need a little less time depending on the cut of the chicken. Olive Oil: You can substitute avocado oil or melted butter.

Spices: Any spices will work in this recipe. Feel free to substitute whatever seasonings you like!

How to Make Grilled Chicken Thighs

  1. Thoroughly mix the marinade.

  1. Add room temperature chicken thighs to the marinade and toss to coat evenly. Let marinate for at least 15 min while the grill is preheating to medium heat.

  1. Place your boneless chicken thighs skin side down on the grill and close the lid. Let the chicken thighs cook for 8-10 min. Flip over to the other side and cook for another 8-10 min until the internal temperature is 165°.

The total grill time for boneless chicken thighs is 16-20 minutes.

Storage

Storing: These leftovers will last in the refrigerator for up to 4 days in an airtight container

Freezing: You can freeze this recipe for up to 3 months, but the texture may change some. We recommend eating fresh.

Reheating: The best way to reheat boneless chicken thighs is to use the toaster oven or regular oven. Microwaving can cause them to get chewy/bouncy, but you can do it in a pinch. You can also slice it and heat it in a pan on the stove.

Boneless Chicken Thighs on Grill

Ingredients

Marinade:

  • 1/4 cup olive oil
  • ¼ cup red wine vinegar
  • 1/2 tablespoon stone ground mustard or dijon mustard
  • ½ teaspoon dried basil
  • ½ teaspoon dried parsley
  • ½ teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes optional

Instructions

Grilling Instructions:

  1. Take your chicken out of the fridge at LEAST an hour before cooking to let to get to room temperature. 
  2. Preheat your grill to medium high heat. When proteins touch grills that are cold or not hot enough it easily causes the meat to stick and creates a mess, preheating is very important.
  3. In a bowl mix together marinade. Add chicken breasts to the marinade and toss to coat evenly. Let the chicken marinate for at least 15 minutes while the grill is preheating. (You can marinate for 2-5 hours if you want to prep ahead of time!)
  4. Place your chicken thighs skin side down on the grill and close the lid. Let the chicken thighs cook for 8-10 minutes or until golden brown with a slight char. Once browned flip over to the other side and finish cooking for another 8-10 minutes. (Note if you are using bone in chicken thighs this will take significantly longer, I would 1.5x the cook time) If you go to flip the chicken breasts and they start to stick, leave them on for another minute!
  5. You can check to make sure your chicken is cooked thoroughly by using an internal thermometer. They should be cooked to 165 degrees F.

Oven Instructions:

  1. Take your chicken out of the fridge at LEAST an hour before cooking to let to get to room temperature. 
  2. Preheat the oven to 425 and prepare a parchment lined baking sheet.
  3. In a bowl mix together marinade. Add chicken breasts to the marinade and toss to coat evenly. Let the chicken marinate for at least 15 minutes while the oven is preheating.
  4. Place chicken on parchment lined baking sheet (it’s ok if they’re close together, they will shrink considerably in the oven)
  5. Bake at 425 for 15-20 minutes or until the chicken thighs reach an internal temp of 165 degrees F. You can check to make sure your chicken is cooked thoroughly by using an internal thermometer.
