You guys. This nut butter. OMG is it delicious. I swear to you – I have had a hard time not just eating this by the spoonful. There’s something about the sweet strawberries + buttery pecans that makes this utterly irresistible.
If you don’t know, I kinda have a thing for nut butter. I have a whole shelf on my cabinet that is overflowing (literally) with different flavors of it. It’s fun to try new brands + enjoy different flavors. Plus, it goes so great on different things… in desserts (like these Paleo Salted Almond Butter Brownies), in yogurt, on muffins.. or you know.. a spoon.

Over the years, I’ve found that some nut butters can have funky ingredients in them… like preservatives, or boat loads of sugar (not my thing).
As with most things that come out of my kitchen – I figured I could make my own homemade nut butter just as easily with squeaky clean, delicious ingredients. I had never made my own pecan butter, but they’re one of my favorite nuts to snack on, so I figured they would be delicious in a nut butter!

The key to a good nut butter is good quality nuts, and roasting them ahead of time. I used Diamond Nut’s Heirloom Reserve Pecans for this nut butter. While I love all of Diamond’s Nuts, these heirloom varieties are special!
They have been passed down over generations and have naturally beautiful irregularities that give them an amazing enhanced flavor and distinct texture – SO yummy! You could totally use their regular pecans for this – but I love the flavor the heirloom nuts give!
In order to get the homemade nut butter going, I roasted the pecans for just a few minutes on a lined sheet of parchment paper. This helps get the oils released from the nuts, which allows them to process smoothly.

Once our pecans are allll roasty + delish – we toss them in the food processor with a few other things like freeze dried strawberries, a touch of maple syrup + a little bit of oil to get it going.
Resulting in the prettiest + most delish Strawberry Pecan Butter! Isn’t that color gorgeous?!

This was my first time making pecan butter, and I have to say – it definitely won’t be my last! Usually I use my Diamond Nuts in things like energy bites, but making my own nut butter was so fun and tasty! I love that I made my own paleo, vegan treat that anyone can enjoy. If you’ve never tried making your own nut butter – I promise it’s easier than you think!
