Things that made me REALLY happy last week: Finding delicata squash at Trader Joe’s for only 99 cents each. (Score!) A few years ago, I had never even heard of delicata squash. I’ve always been a fan of all the other squashes (What exactly is the plural of squash?? That doesn’t seem correct) like zucchini, acorn, spaghetti & butternut.. but had never had delicata! I was working a catering event and delicata squash was part of the appetizer. When I had one bite… I was hooked! They’re SO sweet, very soft, and you can actually eat the skin because it is so thin (no accidentally chopping off your finger while trying to peel it.. not like I’ve ever done that or anything…)
When I saw them I immediately grabbed a bunch of them, planning on making my Turkey Mushroom Apple Stuffed Acorn Squash, but just subbing acorn squash for delicata! This recipe has been CRAZY popular on my website over the past few weeks, and I had been meaning to make it for a while. But then when I got home, I remembered I had bought guacamole & TJ’s Fall Harvest Salsa.. so I couldn’t just let that sit in the fridge. We were going to make tacos the next day with all of it, but I figured it would be just as delicious of I used all of the ingredients and made Paleo Turkey Taco Stuffed Delicata Squash.
And as you can see, it came out REALLY freaking good. I had no intention of putting this on the blog, but since my Turkey Mushroom Apple Stuffed Acorn Squash and Buffalo Chicken Spaghetti Squash Boats are so popular, I figured you all would like these too. How can you really go wrong with a healthier version of tacos?!
As with any great meal – this recipe has simple ingredients, is easy to make, and is filled with flavor. If you’ve been around here for a while, you know I’m all about no-fuss dinners that taste great and are good for you. One of the ways I love to add a nutritional boost to my meals is through Vital Proteins. I put their collagen peptides in practically everything (coffee, tea, soups, stews, etc), but my new favorite product is their bone broth collagen. It’s basically like instant soup, minus ALL the junk. (So perfect for the cold weather!) I love it plain on it’s own, but it adds such a nice flavor and extra punch of protein to recipes like this one!

If you haven’t tried their products, I highly recommend them. I have seen a HUGE difference in my hair skin and nails since taking them. Paleo Turkey Taco Stuffed Delicata Squash
- Preheat oven to 425 degrees + prepare a greased or lined cookie sheet with olive oil.
- Slice delicata squash longways + bake for 20 minutes, face down on the sheet
- While squash bakes, sauté onions in 1 tbsp olive oil until they begin to soften (approximately 5 minutes). Add in turkey, and cook for 10 minutes. Stir in spices.
- Remove squash from oven and stuff with turkey and onion mixture. (Optional: you can add rice or quinoa to the mixture if you'd like)
- Place back in the oven and bake for 5 minutes.
- Top with guacamole & salsa and enjoy!
