From the sweet and spicy marinade to the delicious pineapple salsa on top.. it’s just the perfect meal!

You can serve it over rice, over salad, with grilled veggies, or with potatoes – no matter how you serve it – it’s delicious!

Ingredients for Caribbean Grilled Chicken:
To make this recipe you’ll need:
- Chicken Breasts
- olive oil
- honey
- pepper
- salt
- garlic powder
- paprika
- pineapple
- tomato, onion, jalapeño, and lime juice
A citrus juicer and citrus zester will both be helpful to have.

Tips for best caribbean grilled chicken:
Cut if pieces are too large – Some of the chicken breasts I see at the stores are enormous and super thick. You can butterfly them and cut them into smaller pieces to avoid getting tough, oversized chicken pieces. Either way, butterflying the chicken helps to ensure you have even thin pieces.
Pound/Tenderize– Ever had chicken that is way too bouncy or rubbery? Yuck! The easiest way to prevent that is to tenderize your chicken with a meat tenderizer. Put your chicken in between parchment paper or saran wrap and pound the chicken until it is thinner.
Marinate – Make sure you marinate your chicken! It’s SO important for extra flavor. 30 minutes will do but 1-3 hours is even better (or even 24 hours!)
We loved serving this Caribbean Grilled Chicken with Pineapple Salsa over a big salad. It was super light, but packed with flavor which I love!
This is a recipe that we will definitely be repeating ALL summer long (and let’s be real.. probably into the winter too because we use our grill year round!)

Substitutions for this easy caribbean chicken recipe:
Here are some ways you can adjust this balsamic grilled chicken recipe depending on what you have.
To make Whole30– omit honey
Baking in oven – You can bake the chicken in the oven at 400 for 20-25 minutes if you don’t have a grill.
Chicken– You can use chicken thighs or chicken tenders instead of chicken breasts. This marinade would also be good on a drumsticks or wings!
Other protein – You can use this marinade on salmon or even flank steak! It will also work on veggies.
Storing healthy grilled chicken:
Storing: You can keep this balsamic grilled chicken in the refrigerator for up to 5 days – it’s great for meal prep!
Freezing: We wouldn’t recommend freezing this grilled chicken. Reheating frozen chicken can make it bouncy and unappetizing.

Caribbean Grilled Chicken with Pineapple Salsa
Ingredients
- 1 lb Just BARE Natural Boneless Skinless Chicken Breast Fillets
Marinade
- ¼ cup olive oil
- 1 tablespoon honey
- 1 teaspoon pepper
- 1/2 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 2 tablespoons lime juice
- 1 tablespoon lime zest
Salsa
- 1 cup pineapple chopped finely
- 1/2 cup tomatoes chopped finely
- 1/4 cup chopped onion chopped finely
- 2 tablespoons cilantro chopped finely
- 1 tablespoon jalapeno chopped finely
- 1 teaspoon black pepper
- 1/2 tablespoon olive oil
- 2 tablespoons lime juice
Instructions
- In a bowl, whisk together all ingredients for the marinade. Add marinade and Just BARE chicken breasts to a plastic bag or glass container + allow it to marinate for at least 10 minutes (the longer the better!)
- While chicken is marinating, prepare the salsa. Chop all vegetables/fruit in very small pieces. Stir together in a bowl and set aside
- Heat the grill to medium-high heat. Grill chicken for 5-7 minutes on each side over medium-high heat or until internal temp is 165 degrees
- Serve grilled chicken with salsa on top over a salad or alongside roasted veggies + enjoy!

This recipe is sooooo good! After we finished the chicken with the salsa on top, my boyfriend and I started eating the rest of the salsa with a spoon out of the bowl! I love the marinade for the chicken; it adds a little something extra than just my typical salt and pepper. I marinaded it overnight and it was amazing and so easy!

One of our new favorites! We’ve made it several times and it is delicious, not to mention pretty enough to serve to guests. Leftover chicken is delicious reheated next day or sliced cold onto a salad. Any leftover salsa might get eaten with chips if I’m feeling dangerous. Shhh…don’t tell anyone.

Made this with chicken thighs, marinated for 8 hours before grilling. Delicious meat, and salsa was fabulous…should have made more.
