While it’s super easy to make your own Healthy Chicken Fajitas on the stovetop or even sheet pan shrimp fajitas, this slow cooker version is even easier!

If you’ve never had fajitas before, they are basically just crockpot chicken tacos‘ veggie packed cousin. They are loaded with delicious bell peppers and onions.

These easy crockpot chicken fajitas take only 10 minutes of prep and 8 ingredients for a protein and veggie packed dinner that your family will love!

Liz’s top tips for chicken fajitas

  • Pro Tip for Shredding Chicken: Shred it in your stand mixer- it’s so much easier than shredding with 2 forks! Place cooked chicken breasts in your stand mixer and use the paddle attachment on low until the consistency you want.
  • Cut Veggies Evenly: Cut your onions and bell peppers into similar-sized strips so they cook evenly and have the perfect texture for your fajitas.

Ingredients

Substitutions

Rotel: You can substitute Rotel for canned tomatoes or diced tomatoes with green chiles.

Honey: You can replace honey with maple syrup or skip it entirely. Skip if Whole30.

Bell peppers: Any color of bell peppers will work in this recipe.

Taco Seasoning: We use homemade taco seasoning. It’s way lower in sodium than the packaged kind.

WW Points: Will vary depending on the plan you follow. This is a very low/no point recipe. Olive oil will be the only high point ingredient. I’d estimate 1 point per serving.

You can also make crockpot chicken fajitas in an oven. Place in a baking dish cooked at 400 degrees for 30-45 minutes or until the chicken’s internal temperature reaches 165 degrees and the bell peppers are soft.

How to make Crockpot Chicken Fajitas

  1. Mix Rotel, honey, and garlic in a slow cooker.

  1. Place onion and bell peppers on top.

  1. Layer chicken on top.

  1. Sprinkle with taco seasoning. Cook on low for 8 hours or cook on high for 4 hours.

  1. Remove chicken and shred and mix chicken back in the bell peppers onion and Rotel mixture. Serve warm on tortillas or by itself with limes!

Can I put frozen chicken in the crockpot?

No, you can’t use frozen chicken breasts in the crock pot. This is a major food safety issue. If chicken is not entirely thawed it may not cook thoroughly. If you want to use frozen chicken to make shredded chicken, we love instant pot shredded chicken.

Storing: You should store crockpot chicken fajita in an airtight container in a refrigerator for up to 5 days or in a freezer for up to 6 months. Thaw completely before reheating and serving.

Reheating: You can reheat this recipe in the microwave, toaster oven, oven, or on the stove.

Can I make this ahead of time and freeze it? Yes, you can make slow cooker chicken fajitas ahead of time and freeze them for up to 6 months after initially cooking them. Thaw completely in a refrigerator before re-heating and serving.

Ingredients

  • 1 10 oz can of Rotel
  • 1 tablespoon honey
  • 1 tablespoon minced garlic
  • 3 cups sliced bell pepper cut in strips
  • ½ cup diced onion
  • 2 lbs boneless skinless chicken breasts
  • ¼ cup low sodium taco seasoning
  • limes for serving

Instructions

  1. In a 6-8 quart crockpot, mix Rotel, honey, and garlic.
  2. Layer the bell peppers and onion in the crockpot over the Rotel mixture.
  3. Layer the chicken breasts over the vegetables and coat with taco seasoning.
  4. Cook on low for 6-8 hours or on high for 4 hours. The chicken’s internal temperature should be at least 165 degrees and easy to break apart.
  5. Using forks or a shredding tool, shred the chicken and mix with peppers and Rotel mixture.
  6. Serve warm on soft tortillas or by itself with limes for fresh lime juice.

    1. Absolutely not. Frozen chicken should never go in the crockpot. It’s a food safety issue.

    1. This is one of my families favorite meals. Super easy, and lots of flavor and I know all of the ingredients that have gone into making this (we make our own taco seasoning). There’s so much juiciness even after shredding. I do however sauté my peppers onion and garlic before adding to the crockpot because I like the added flavor.

    Love this. I can’t get Rotel in the UK, I made my own (I think) by sweating down 6 peeled and diced tomatoes with a green chilli chopped up and mixed in, with some tomato puree. Was a top notch meal.

    So easy and delicious. I love the addition of the honey for a slight sweetness. I was worried there wouldn’t be enough liquid in the crockpot with just the Rotel, but once the veggies released their water, the mixture was perfectly juicy. We are going to have leftovers throughout the week over chips, tortillas, and salad- lots of possibilities. Our toppings included: black beans, cheese, plain Greek yogurt, lettuce, salsa, hot sauce. Great recipe for weeknights and meal prep.
