These Southwest Bacon Breakfast Burritos are a new favorite. Freezer/meal prep friendly – you can make a big batch in under a half hour and store them for mornings where you need to grab and go!

To make these breakfast burritos you’ll need:

  • eggs
  • black beans
  • shredded cheddar cheese

What is the best bacon for breakfast?

We are pretty picky about our bacon and only use the bacon from ButcherBox.

How To Make A Breakfast Burrito

Making breakfast burritos is super quick and easy. Here’s how we make them:

  1. Heat a large sauté pan. Add bacon and sauté for 2-3 minutes on each side until golden brown. Once cooked, remove ¾ of the bacon grease from the pan, leave about a tablespoon.

  1. Add onions to the bacon grease and sauté for 3-5 minutes until slightly translucent. Add scrambled eggs to the pan and cook for 3-5 minutes.

  1. Once eggs are cooked, stir in black beans so they warm from the residual heat.

  1. Crumble the bacon and assemble your burritos.

How Do You Wrap Breakfast Burritos?

Wrapping breakfast burritos doesn’t have to be difficult. Add your fillings towards the middle of the burrito. Fold the tortilla in half over the filling. Pull the filling and tortilla back tightly, packing the filling together.

Additional Breakfast Burrito Ideas

Here are some other ways you can customize this recipe:

Bacon: We love these burritos with bacon, but breakfast sausage would work too. We love ButcherBox Breakfast Sausage!

Eggs: Feel free to sub in egg whites or add more eggs for protein. We haven’t tried an egg substitute

Black Beans: You can omit black beans. You can also substitute with pinto beans, kidney beans, or refried beans

Cheese: Any cheese will work in this recipe. We like pepper jack, monterey jack, or even mozzarella

Tortillas: I like to use the Protein Wraps from Aldi for tortillas but you can use any tortilla/burrito wrap for this recipe.

Salsa: Any salsa will work in this recipe. You can also sub chopped tomatoes

Avocado: You can skip the avocado or sub guacamole for these burritos

Other Add Ins: Roasted Potatoes, Sweet Potato Home Fries, taco seasoning and rice would all be good additions to this recipe. Feel free to add other mix ins per your tastes!

Hot Sauce: We recommend adding a little hot sauce to the burrito as you’re eating it

Can you freeze bacon burritos?

Yes you can freeze bacon burritos. Roll them in aluminum foil and store in a freezer bag to keep them fresh.

When ready to heat, add to a toaster oven or remove from foil and microwave until defrosted.

Storage and Reheating Tips

Storage: I like to wrap these burritos in aluminum foil to keep them from falling apart. I wrap the burrito and immediately wrap it in foil.

Refrigerator: These burritos will last in the refrigerator for up to 4 days.

Freezing: You can freeze these breakfast burritos. Once wrapped in foil, put in a freezer bag. They will last in the freezer for up to 2 months.

Reheating: You reheat these burritos in a toaster oven or regular oven. You can also microwave them (make sure to remove foil)

Breakfast Burrito FAQ

How do you make a burrito not soggy?

The key to making a burrito not soggy is to allow your filling to come to room temperature before rolling. Unless you plan to eat the burrito immediately, allow your filling to cool before rolling. When you roll the burrito – roll it tightly to prevent condensation from building up.

Are breakfast burritos healthy?

Not all breakfast burritos are healthy. Many are super high in calories, fat and carbs and low on protein which can make them not as filling. This breakfast burrito recipe is a healthier option because it’s lower in calories and higher in protein. It’s also made with good quality ingredients

Can you have a burrito without beans?

Yes, you can have a burrito without beans – simply omit them from the recipe if you don’t like them or can’t eat them.

Ingredients

  • 10 oz ButcherBox Bacon sliced in quarters
  • ½ cup onions diced finely
  • 5 eggs
  • ½ cup black beans rinsed and drained
  • ½ cup shredded cheddar cheese
  • 6 tortillas
  • ¼ cup salsa
  • ¼ avocado

Instructions

  1. Heat a large sauté pan. Add bacon pieces to the hot pan and sauté for 2-3 minutes on each side until golden brown.
  2. While bacon cooks, scramble eggs in a bowl on the side
  3. Once bacon is finished cooking, remove ¾ of the bacon grease from the pan. Discard or save for another day. Leave just enough bacon grease in the pan to sauté the onions/eggs (about a tablespoon)
  4. Add onions to the bacon grease and sauté for 3-5 minutes until slightly translucent.
  5. Add scrambled eggs to the pan and cook for 3-5 minutes.
  6. Once eggs are cooked, stir in black beans so they warm from the residual heat.
  7. Crumble the bacon and assemble your burritos. Tip for rolling burritos: once you've added your filling and toppings, fold the tortilla in half. Gently pull the top half of the tortilla, packing the filling in tightly (see above for photo). Tuck the sides in and then roll.
  8. Optional: We like to drizzle a little hot sauce on the burrito while eating
