Grilled Greek Chicken Kabobs Ingredients
To make this kabob recipe you’ll need only 11 ingredients! It’s made with simple ingredients that you probably have in your fridge and pantry!
- chicken breasts
- veggies: bell peppers, red onion, zucchini
Greek Chicken Kabob Marinade
- olive oil
- lemon juice & lemon zest
- minced garlic
- dried basil, oregano, thyme
- salt, pepper, red pepper flakes

How To Make Greek Chicken Kabobs
Making Kabobs is super simple. Here’s how to do it:
- In a large bowl, mix together your marinade. Add cubed chicken and vegetables. Stir together until evenly coated and marinate for at least 20 minutes.
- Once the chicken/veggies have marinated – preheat grill to medium-high heat.
- Assemble skewers.
- Grill on medium high heat for 5 minutes, flip and grill for another 5-10 minutes until chicken is browned and cooked to 165 internal temp.



How Do You Cut Chicken For Kabobs
Cutting chicken for kabobs is easy. I always pound my chicken with a meat mallet slightly to ensure that it is nice and tender.
Once the chicken is pounded, cut in thick strips (about 1-1.5 inches wide)
Cut the strips into 1.5 inch cubes and your chicken will be ready for kabobs!
Tips for the best Greek Chicken Kabobs
- Pound chicken before cutting into cubes: This will give you super tender chicken.
- Marinate the kabobs for an hour: This is the perfect amount of time to give them flavor!
- Use metal skewers instead of wood: Wood skewers can easily burn. If you’re going to use them make sure to soak them in water ahead of time.
How to Bake Greek Chicken Kabobs in the Oven
We don’t recommend baking these in an oven, but it can be done. If you are going to bake these kebabs you can bake on a lined baking sheet for 20-25 minutes at 425.

Substitutions for Greek Chicken Kabobs Recipe:
Chicken: Boneless chicken thighs or chicken tenders would also work. I have not tried this recipe with tofu or steak but I think it would work well!
Marinades: You can use any of the marinades in these posts on these kebabs: 5 Healthy Chicken Marinades, Vegetable Kebabs, Healthy Lemon Basil Vinaigrette, Nut Free Pesto, or Creamy Balsamic Dressing. You can also opt for store bought greek dressing or this Greek Salad Dressing Recipe!
Veggies: You can swap out the veggies in this recipe. Mushrooms and onions would be delicious!
Olive Oil: You can substitute olive oil with avocado oil.
Lemon Juice: Do not use lemon juice from a bottle, use freshly squeezed.
Fresh Herbs: You can substitute dried herbs with fresh herbs. For each 1/2 teaspoon of dried herbs you can use 1 1/2 teaspoon fresh herbs (minced)
Best skewers for grilling:
Metal skewers are definitely better for grilling because you don’t have to worry about them burning or catching fire. (Or leaving little flecks of wood in/near your food!)
I think these metal skewers from amazon are the best for grilling. They’re reasonably priced and have held up great for us. We pop them right in the dishwasher after using!
If you need to use wooden skewers, these are a good option.
Storing and Reheating Greek Grilled Chicken Kabobs
Storing: These kebabs will last for up to 4 days in your refrigerator.
Reheating: We do not recommend reheating these kebabs in the microwave. Instead, heat them in your oven or toaster oven.
Freezing: We don’t recommend freezing these kabobs.
Make Ahead: You can marinate your chicken and vegetables ahead of time but I wouldn’t recommend marinating for more than 24 hours. Citrus can release an enzyme that makes meat break down if they are near one another for too long.
What Should I Serve With Chicken Kabobs?
Here are some ideas for how to serve these Kebabs:

These kebabs are pretty filling/a meal in themselves so you don’t have to go crazy with sides!
Chicken Kabob FAQ
Kabobs take about 15-20 minutes to grill. The best way to check if your kabobs are done are to use an internal temp thermometer. Chicken should be cooked to 165 degrees
It’s easy to grill chicken kabobs without burning them. The key to not burning everything on the grill is cooking it low and slow. Do not put the chicken on a super hot grill. Cook over medium heat and turn every few minutes to prevent them from burning
You can prepare the kabobs the night before, however: lemon juice can break down chicken and this recipe does have lemon juice in it. If you are going to make these ahead of time, we recommend omitting the lemon juice from the marinade and sprinkling fresh lemon juice on the chicken when it comes off the grill instead.

Greek Chicken Kabobs Recipe
Ingredients
- 1 lb chicken breasts cut into 1.5 inch cubes
- 2 cups bell peppers cut into cubes (about 2 peppers)
- 2 cups red onion cut in 1 inch segments
- 2 cups zucchini sliced 1 inch thick (about 2 zucchini)
Marinade:
- 3 tablespoons olive oil
- 2 tablespoons lemon juice juice of one lemon
- ½ tablespoon lemon zest zest of one lemon
- 1 tablespoon minced garlic about 3 cloves
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- ½ teaspoon dried thyme
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1/8 teaspoon red pepper flakes optional
Instructions
